Cookies + Coffee

I have to share two things with you.

1. Make these cookies.

But do not make them if you’re really hungry, in the house by yourself, or just really in the mood for a good cookie. Because I ate 6 the night I made them. Six cookies! Woke up with a little tummy ache and ate 5 more later that day. Then 3 Monday. At least the number per day was going down, right? They are delicious.

I did make a few changes: using all white whole wheat flour, a flax egg instead of egg replacer, and walnuts in place of pecans.

2. If you like steak and coffee, make this.

I’ve heard of coffee rubs on steak but had never tried it. Since we now have a ton of Honduran coffee, I decided to use some of our espresso in this mix.

Spiced Espresso Rub

  • 2 Tbsp ground espresso (or coffee of choice)
  • 1 Tbsp ancho chile powder
  • 1.5 tsp ground cumin
  • 1.5 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp cinnamon

Mix together, coat steak, and grill.

We used the rub on some local sirloin Saturday night. The coffee flavor was very subtle! I thought it would be stronger, but it was perfect with the spices in the mix.

What are the best things you’ve made lately?

  1. Bratwurst Pizza!!! (whole wheat pizza dough, beer-sauteed bratwurst, diced granny smith apples, caramelized onions, mustard-tomato sauce, swiss & fontina cheese)

  2. The steak rub looks amazing! Last night, I made the simplest, most delicious dinner: brown rice tortilla + 1/4 avocado + 1 tbsp. nutritional yeast + grilled eggplant + grilled portobello mushroom + spinach. The wrap didn’t hold together well, so it all crumbled together and made for the most delicious flavor combination. I highly recommend it!

  3. I started reading the ingredient list for the steak rub thinking it was the cookie ingredients… and I was thinking wow those are interesting cookies! Ha ha.

    Everything looks delicious!

    Thanks for the birthday wishes!

  4. That spice rub sounds awesome! I would love to try that on steaks. Especially since the flavor is subtle because my husband doesn’t like coffee.

    • After smelling it while I was mixing it up, I was surprised that the coffee flavor wasn’t stronger! We really liked it.

  5. That rub looks good. Last week we had greek turkey burgers with hummus, greek yogurt, romaine, bean sprouts and Israeli cous cous stuffed into a pita. It was great and my 4 kids even liked it.

I made the Snickers Shake last night but used Silk light chocolate milk. It was awesome.

  6. I’ve never heard of a coffee rub! I really like steak and coffee so I can see myself liking the combo. Thanks for sharing!

  7. I’ve never actually made a rub before, thanks for the recipe!

My favorite thing I’ve made recently has to be the banana cupcakes from this past weekend. It’s always something sweet usually. :)

  8. Now I want steak and cookies! Those both look so delicious!

  9. Yum. I love coffee on steaks, it adds a nice almost smokey, woody, earthy flavor that goes so well with meat. I have to admit I haven’t been cooking as much lately because I haven’t been in town much, but I’ve bookmarked a corn and ham chowder that looks amazing to try.

  10. I have been so curious about coffee rubs on meats like this! I need to try this soon, it looks great girlie!

  11. Those cookies look spectacular!
My new thing has been homemade pickles. They were AMAZING. I wish I had another cucumber :-(

  12. I think I need to stay far away from the cookies, but they look really good :)

  13. Those cookies look insanely good! It’s been too long since I’ve had a cookie :)

  14. The cookies sound really dangerous!!!

I made some brownies “for hubby” yesterday but keep cutting a “tiny” piece for myself. I think I have had about 8 “tiny” pieces…

    The rub sounds good!

  15. Whenever I make dangerous baked goods I always make sure to have someone nearby that I can unload them on. That or I freeze them right away. Otherwise I’d be like you and give myself a tummy ache :P

  16. Those cookies look delicious Brandi!
The best thing I’ve made lately is probably one of my super awesome oatmeal combinations :P

  17. Ah, they sound amazing! I can easily see how 6 could be consumed without much thought.

  18. Those cookies look amazing!! Better not make them right now though b/c I am STARVING and I am a total cookie monster! I’ve definitely eaten 5… or 6… or 7 in one sitting!! ;)

  19. i have LOVED your trip photos! ah~ ive got the travel bug. i have heard of coffee rubs but never experimented. thanks for the post!

  20. Ooooh cookies! They look SO good! I made a really good pasta dish earlier this week and am hoping that, though simple, tonight’s spicy tuna melts are delish!

  21. i had a giant cookie today but yours looks so much better!
