Welcome to Fall

It’s official!


Okay, so it’s not really officially fall, but my first bowl of pumpkin oatmeal happened this morning so it has started for me!


I normally reserve Friday mornings for “chocolate for breakfast”, but my bowl of pumpkin oatmeal asked me for a few dark chocolate chips. Who am I to say no?

  • 1/2 cup oats
  • 1 cup water
  • pinch salt
  • 1/2 banana, sliced
  • heaping 1/4 cup pumpkin
  • cinnamon – a ton. 1 Tbsp or so?
  • 1 Tbsp TJ’s roasty flaxseed peanut butter
  • dark chocolate chips


Pumpkin + pb + dark chocolate = TruLuv4EvR

This bowl and a few steamy cups of coffee were the best way to start this busy Monday.


4 hours later, I was ready for lunch.


Thank goodness for leftovers! I think I have enough for lunch tomorrow, too.


I heated up some of the leftover whole wheat pasta/veggie/ground beef pasta bake along with 1.5 cups of broccoli for a big pasta bowl.


I’ve got some big plans for today and needed a healthy and filling lunch. This fit the bill! Easy, hearty, and a good balance of whole grains, lean protein, and veggies.

Things I’m looking forward to this fall:

A ton more football.

Sweatshirts, jeans, and flip flops.

Running on a crisp morning.

Chunky sweaters and boots.

More pumpkin oatmeal.

Thanksgiving – my all time favorite holiday.

Hot tea on cool nights.

Changing leaves against bright blue skies.


Fall puts me in the best mood!

  4. Pumpkin and chocolate is such a good combination! I love fall… I’m eating roasted kuri and butternut squash for lunch right now!

  5. I made 2 loaves of pumpkin chip bread last week. With my kids back in school, it a perfect snack for all of us. I love your “Fall List”. We love Fall as well, lots of things to do and see.

  6. I love fall for all of those reasons except more football. I OD on football pretty quick ;) The best part is definitely jeans and oversized sweaters!

  7. As sad as I am to see Summer go, I am excited that it’s Fall! I like the “not too cold-not too hot” weather, Halloween and Thanksgiving, and fall foods! I made my first bowl of pumpkin oatmeal last week and I was super happy.

  8. I think I might have my first bowl of savory oats tomorrow with turkey bacon and cheese, and of course, Frank’s hot sauce!

  14. I looovee love love Fall!! This morning was the first morning it actually felt like Fall. Granted, it was 80* by 10:00..but it’s something! Better than high 90s, right? ;)
