Rain, Rolls, and Sweats

Today is one of my favorite days of the start of fall.

The weather is gray and rainy and it’s the perfect day to break out my VT sweatpants. I haven’t worn these since winter! I’m excited to have them on again :)

I’ve had a busy day so far. Nick and I ran 4 miles this morning (which is the longest run we’ve done since this time last year) and it only rained on us for the last 1.5 mile.

Came back from the run, showered, and got these in the oven.

Pumpkin Cranberry Cinnamon Rolls!

IMG_1175

I used Mama Pea’s Pumpkin Cinnamon Roll recipe, increasing the pumpkin to 1/2 cup and adding dried cranberries to the filling.

They were so easy and got me really excited for fall. I mixed up the dough this morning before our run and let them rise while we were gone. IMG_1174

Definitely make these if you have some pumpkin in the house!

I took them to a women’s brunch this morning and made it back home with 3 for tomorrow ;) I was hoping there would be a few leftovers.

After the brunch, I headed to get groceries before coming home for lunch and guess what I found?

Kabocha and butternut squash! For only .69 a pound. I’ve been waiting for winter squash and I only found kabocha in the stores here for 2 weeks last year so I made sure to buy a few today.

I unpacked the groceries and finally just ate lunch around 2:30 while watching 2 games and listening to ours ;)

We had some spinach that needed to be eaten and 1/2 an avocado I didn’t want to forget about, plus one of our last tomatoes from our garden.

  • spinach
  • romaine
  • carrots
  • scallions
  • tomato
  • avocado
  • raspberries
  • hummus

Nick just handed me a beer…and that’s about it for our plans today!

Football.

Laundry.

Cleaning house.

Eating.

Drinking.

Football.

And, more football.

They’re not calling it “monster Saturday” for nothing! 4 big games, and I’m settled in my sweatpants. Doesn’t get much better than this.

I have to say that this was one of the first times I really got into college football with the JMU vs. VTech game… I went to JMU so this was a huge day for us! Although my little sister who is currently a Hokie wasn’t too thrilled :/ Ah well, it’s all in the fun of the rivalry right? :)
