Summer-Filled

Tonight’s dinner had most of my favorite summer veggies, and it’s probably the last time I’ll have them until next year.

Might as well go out with a bang!

And check out this double zucchini I found at the market. It was the last one, and I wasn’t about to leave it there just because it wasn’t as pretty as the others. It gave me double the veggie for the same price!

I made a pasta bake with zucchini, yellow squash, green and red peppers, onions, garlic, tomatoes, ground beef, and whole wheat pasta. Just sauteed the veggies, cooked the meat, stirred in the tomatoes with some tomato paste, oregano, salt, crushed red pepper, and basil and mixed everything together before topping with some fresh mozzarella we had leftover from pizzas last week.

Baked at 400 for about 20 minutes until the cheese melted.

I originally had plans to make stuffed shells tonight, but I knew we would be going running after work and knew that meal would take me too long to put together once we got back.

This turned out perfect! Quick, easy, and it’s stuff that most people always have on hand, especially in the summer.

As for our run, it was awesome today. It’s days like these that I remember why I love running. Too bad every day can’t be like this one! The weather was beautiful, I felt great for the entire run, and I had my best time since last fall – it was a good one.

I’ve got one more load of laundry to fold tonight and we’re watching football :) No surprise there.

There’s dessert in the oven, and I’ve got such a fun breakfast planned. Cannot wait!!!

  1. Yum! I’m hearing about so many people on zucchini overload and I want to be on it, too! I need to at least pick some up at Whole Foods! That double zucchini is awesome and the dish looks delicious :)

  2. Yay for a good run! Im waiting for that perfect running weather here, but I know it will come eventually.

  3. Sounds like a great pasta dish–easy to throw different veggies in..whatever you have in the fridge type of dish–love it!
