Mt. Hamper

Here’s what I’m facing today, on top of 8 hours of work.

That makes me tired just looking at it. It’s a mountain of laundry – like my hamper threw up this morning and left me to clean up the mess.

Thankfully, I’m having a HUGE salad to fuel me through the afternoon of computer work + a couple loads of laundry.

I don’t know about you, but wimpy salads don’t work for me. If I’m going to have a salad for my MEAL, it has to be big, full of good variety, and include some protein + healthy fats. Otherwise, I end up hungry again in less than an hour.

Today’s salad definitely fit my requirements.

  • Spinach
  • Romaine
  • Broccoli
  • 1/2 avocado
  • 2 hard boiled eggs
  • Carrots
  • Scallions
  • Berries
  • Tomato
  • Homemade dressing: olive oil, balsamic, dijon, salt, pepper.

What do you add to salads to make them filling enough to be a meal?

And do you hate doing laundry as much as I do? I take that back – I don’t actually hate doing the laundry…I just hate having to bring it back upstairs and put it away :)

  1. I HATE having to fold everything and put it away, it’s by far my most detested chore in the house and it never stopssss! Luckily The Man doesn’t mind it too much so many times he’ll fold my stuff up for me and eventually it’ll make it’s way to my closet/dresser :P

  2. Salad monster > Laundry monster. Good luck! (PS – I usually throw some chopped avocado or a boiled potato on top to beef up my salads)

  3. Salads need either meat or cheese, lots of veggies, fruit (I love berries too, or grapes!), and hummus sometimes.

    I actually like doing laundry because I love the smell of freshly cleaned clothes and the warmth of the clothes when they come out of the dryer. However, I despise folding and putting away laundry!

  4. FOLDING the laundry is what gets me. Usually it sits in my dryer until I use it ;)

  5. Oof. That is a LOT of laundry, girl. I feel your pain..I have a slightly smaller load to do myself…a laundry hill? heh

  6. I’m doing laundry AND eating a huge salad as I read this!! I actually like doing laundry and having clean clothes/sheets/towels. In my huge salad at the moment is: romaine, cabbage, parsnip, carrot, tofu, black beans, corn, and eggplant. Enjoy your day!

  7. I love adding healthy fats and proteins to my salads! If I am in the mood for a light salad, I usually have something more substantial on the side, like a roasted sweet potato or some such.

  8. Salads used to *never* keep me full but lately I’ve been adding a ton of protein (like 4 eggs or 2 eggs/tuna mix), a good base of spinach instead of just lettuce, and tons od add ins like cucumbers, tomatoes, beans..

    It seems to be doing the trick. :)

  9. I found that adding almonds or other nuts to salads makes them alot more filling.

    I HATE doing laundry! But the satisfaction after I’m done with them can’t be beat. :)

  10. I add just about anything I can to my salad. But to make a filling meal type salad I definitely add protein (beans, tofu..etc) and healthy fat with avocado. That combo always does the trick!

  11. I agree that salads with some ‘heft’ are very necessary. I use either cottage cheese instead of dressing, sunflower seeds, or avocado to help in that department.

    I actually love doing laundry for some reason – very weird, I know.

  12. I hate laundry but that is Hunni’s chore so I make lots of it :-)
