Happy Thursday!
Is anyone else as excited as I am? College football starts tonight!!! I’ve been waiting for this day since January :) Wahoo!
Fall has always been my favorite season – I love the changing leaves, crisp mornings, and the chance to wear jeans with a sweatshirt and flip flops. Plus, fall brings football, winter squashes, and Thanksgiving.
Although I can’t believe September is here already, I’m psyched about it.
My breakfast last week was so good, I decided to make the same meal again for lunch today.
Another round of Spaghetti Eggs!
Since we only used this red sauce on one pizza the other night, I had about 1/2 cup of it in the fridge, just waiting to be used.
I heated up the sauce with 2 cups of chopped baby spinach and poured it over a serving of oatbran. Topped with eggs and some local peach on the side, it made for a delicious lunch.
Breakfast and lunch tend to be repeat meals for me, but when they’re meals like this, I don’t mind it. I like having quick meal ideas to use when the day is busy or I have random leftovers in the fridge to use up.
And with that…I’m off. I think I’m going to make another batch of jam during my lunch break – we’ll see if I can get it done :)

You enthusiasm for college football makes me want to watch this season. However I have no team to route for and a lack of knowledge of college rules over NFL. Perhaps you can persuade me to the VTech ways and teach me a bit? :-)

Those spaghetti eggs look great! I definitely repeat meals, and I tend to get into phases with my food. I have the same breakfast every morning–0% Fage + fruit + gluten-free cereal–and a salad for lunch almost every day. Every Friday night, I eat a baked sweet potato topped with a mixture of cannelini beans + spinach + curry powder. I love my repeat meals!
Yay September! I think my repeat meals are chicken parm and spaghetti carbonara. Both simple… I usually have everything I need for either dish.

I certainly repeat meals– breakfast usually. And I get in grooves where I eat the same thing for breakfast for a few weeks then end up switching it up and gettin in another groove haha. I also make baked tofu, brussel sprouts, and sweet potato “fries” for dinner about once a week. :)

I’m SOOO excited about football (this I’m sure you know). I won’t be able to watch the games tonight because I won’t get home for the day until 9 p.m. but I’ll tune in on the radio when I can. Woo hoo!
I’ve been seeing these ‘spaghetti eggs’ around the blog world and am hesitant to jump on board. I love bread (who doesn’t), I love red sauce and I love eggs, so I would have to like them all together, right? :)

My repeat meals tend to be pasta dishes – Moroccan lasagna, homemade lemon-ricotta gnocchi and so on; they’re easy to make, and folks around my house usually request ’em at least once a week.
