Did you ever have the “tuna surprise” as a school lunch option?
I remember seeing it on the menu, but I definitely never picked it to eat. I wasn’t a big tuna fan growing up, and I don’t remember my mom ever making tuna casserole for us, either. So it’ always surprising to me when I put together tuna meals!
This one turned out great.
While some whole wheat pasta was boiling, I cooked up the rest.
- diced zucchini
- 2 cups diced cherry tomatoes
- 1/2 red onion
- 1 can artichokes, drained and chopped
- 2 cups broth
- 2 Tbsp flour
- 1 Tbsp dijon mustard
- 1 Tbsp tomato paste
- garlic
- oregano
- salt and pepper
- 2 cans albacore tuna, drained
After sauteeing the veggies, I added in the flour and let it cook together for a minute. Then I just poured in the broth, brought it to a boil, and let it simmer/thicken for 5 minutes.
Stir in the mustard, tomato paste, seasonings, tuna and pasta and toss to combine.
I love the mediterranean flavors with tuna!
I’ve got a special breakfast planned for tomorrow :)

Tuna’s one of those things I don’t eat alot because I always forget how good it is until I taste it in a dish randomly.

your eats looks amaze as always. as much as i hate to admit it, i LOVE tuna casserole. it’s so midwestern, but so delicious and this dish reminds me exactly of that!

im saying pancakes or waffles.. emphasis on pancakes tho :)

This is tuna casserole AMPLIFIED. Way better than any crappy school lunch version! I love that you remade a classic. So good!
Looks awesome, but I would leave out the tuna, I am not a fan LOL!! I think it’s because it was cheap and my Mom made it for us all the time as kids, I just can’t eat it now.

I actually never had tuna casserole up until last year..I guess it was really a staple with all of my friends growing up..this version sounds good!
