Three Good Things

1. I woke up this morning wanting two things: chocolate and peanut butter. And I never feel bad about having chocolate in my breakfast on Fridays.


Today’s bowl:

  • 1/2 cup oats
  • 1 cup water
  • pinch salt
  • cinnamon
  • 1/2 banana
  • 1 Tbsp TJ’s roasty flaxseed peanut butter
  • 1 Tbsp dark chocolate chunks


Friday also means that we make coffee to take with us, which makes me very happy :)


Between this tasty bowl of oatmeal and our Honduran coffee, I’m having a great start to my day.


2. My lunch today is going to be awesome! I’m already excited about it.


I whipped up my favorite egg salad recipe the other night and will be wrapping that up come lunch time.

This batch (4-5 servings):

  • 7 hard boiled eggs, peeled and chopped
  • 6 oz. plain greek yogurt
  • 1 Tbsp dijon mustard
  • 1 Tbsp sweet relish
  • salt, pepper
  • 1/2 tsp smoked paprika

If you haven’t put smoked paprika in your egg salad, do it!


I’ve got a salad for some veggies: cherry tomatoes, avocado, romaine, carrots, and scallions.


3. The BEST thing about today: My Dad comes home tonight! He’s been in Guam for work since March and is flying home as I type. I know my mom is super excited to see him, and we are too! It’s been strange not having him at family get-togethers, and he’s coming back just in time to make it to the VT / Boise State game with us next weekend ;)

    Your breakfast and lunch look great! Glad your Dad is on his way home. 1.We have plans tonight with friends 2.My boys have a hockey game this afternoon and I’m excited to watch them play 3.I have an avocado in the fridge that I’m going to use with lunch.

    I made your smore’s cups last night but I made them in mini-muffin liners. They hit the spot, a perfect little portion of love. My kids all loved them too.

    1) My first day interning at the library went well.
    2) I’m going to my favorite Italian place tonight.
    3) Being able to walk my dog (cold front came through).

    It’s like dessert for breakfast! I would never feel bad about that- sometimes a little chocolate is necessary to kickstart the day!

    Those oats look incredible! I love peanut butter and chocolate so that is definitely a great way to start the weekend! Hope you have a good night with your Dad!

    So exciting that your Dad is coming home! I don’t get to see my parents/family for months-years at a time so I know that feeling! YAY!!

    Three good things about today:
    1. Is it enough that one is IT’S FRIDAY!! So pumped for the weekend.
    2. I’m meeting up with Holly (the everythingtarian) tonight for Indian food. Two fave things at once :)
    3. I have no other plans for the weekend – love that feeling!

    1. I ran 5 miles this morning. I had to get up at 4:45 and I stepped in dog poop just before getting on the treadmill but I still mananged to pound out 5 miles.

    2. I get a pedicure today!

    3. Cookie/apple day at daycare. Margaret talks about it all week long. Love it when she gets what she has been dreaming off all week.

    Love the chocolate & PB oatmeal dish and I am adding that egg salad to my menu for this next week. I haven’t made egg salad in forever, mostly out of lack of inspiration as to how to replace the mayo, but I really like your recipe!

    Three good things to my day so far:
    1. Despite going to bed late I am up at 6 and embracing the quiet time alone by blogging while the husband sleeps in

    2. Delicious coffee is in hand

    3. I have the day off and am enjoying the slow start

    So exciting about your dad coming home! that’s wonderful. For me it’s:
    1) I’m going to NJ this weekend to see my family
    2) My little boy is growing strong and healthy and is 34 weeks already!

    Mmm, knowing I can put a little chocolate into my morning breakfasts gets me out of bed a little quicker :)

    My hair looks amazing. (Silly? Yeah. But I’m a Floridian and when the humidity decides to take a day off it’s noteworthy)

    My boyfriends gets to meet my old friends from university
