I have no clue what to call this breakfast.
But when Nick saw me putting my plate together this morning, he said “You’re going all out with those spaghetti eggs!”.
We had about 1/2 cup of red sauce leftover from the baked arancini the other night, so I heated it up with a cup of chopped spinach to layer with my oatbran and eggs.
I’m not sure what it is about this combo, but I love red sauces/tomato sauces with eggs.
Eggs cooked in tomato sauce, eggs on pizza, or like this. I know some people think it’s weird, but I just think they haven’t tried it.
