Corny

The dinner I made last night turned out great, but I think it needs some tweaking before I post the recipe.

When I was digging through the fridge last night after work, I found a few sweet peppers from the market that I had forgotten about, along with the 4 ears of corn I wanted to use in this soup.

I wouldn’t call it a “chowder” because it wasn’t a very thick soup, but it was hearty! Full of bacon, red onion, peppers, corn, evaporated milk and scallions, this dinner was the perfect meal last night. I know it’s still summer but yesterday was gray and rainy and gloomy – all the makings for a good soup day.

Tonight, we had leftovers of the soup – Nick had his with salad and I put mine over about a cup of broccoli. The soup was spicier tonight! I love when meals get more flavorful over time; it’s fun to see how different something can taste from one day to the next.

I just started going through my picture from Honduras…holy moly. I have more than I thought I did! Recaps will probably be next week once I get through them all.
