Overnight Delivery

Breakfast today was another thing I missed in Honduras: Overnight oats, aka my favorite way to have oatmeal on a hot summer morning.

Last night I mixed up the base:

  • 1/2 cup oats
  • 1/2 cup Almond Breeze unsweetened vanilla (the larger refrigerated one!) detail Thanks to a coupon from Foodbuzz, I was finally able to find it and get it this weekend. I love that there are more than juts 4 servings.
  • pinch salt
  • cinnamon
  • 1 tsp chia seeds

This morning, I added in some of my favorite mix-ins:

  • 1/2 cup greek yogurt
  • diced local peach
  • raspberries (organic, but not local – they were out this weekend)
  • local blueberries
  • walnuts

Overnight oats are so filling, healthy, and easy!

They’re one of my favorite breakfasts for busy mornings: as long as I do a bit of prep work the night before, breakfast is basically just waiting for me to dig in. Not many meals will wait on you.
