Breakfast today was another thing I missed in Honduras: Overnight oats, aka my favorite way to have oatmeal on a hot summer morning.
Last night I mixed up the base:
- 1/2 cup oats
- 1/2 cup Almond Breeze unsweetened vanilla (the larger refrigerated one!) Thanks to a coupon from Foodbuzz, I was finally able to find it and get it this weekend. I love that there are more than juts 4 servings.
- pinch salt
- cinnamon
- 1 tsp chia seeds
This morning, I added in some of my favorite mix-ins:
- 1/2 cup greek yogurt
- diced local peach
- raspberries (organic, but not local – they were out this weekend)
- local blueberries
- walnuts
Overnight oats are so filling, healthy, and easy!
They’re one of my favorite breakfasts for busy mornings: as long as I do a bit of prep work the night before, breakfast is basically just waiting for me to dig in. Not many meals will wait on you.

Mmmm that looks good! Such pretty pictures! I love that you use so many local ingredients– I’m not so good about that … yet!
So jealous of the almond milk coupons. I don’t think I was offered them. That or I missed the email, which is kinda likely.
I never tried almond milk, I wonder how it tastes like.

Almond Breez is definitely my favorite almond milk. I was happy about the coupons!
