Ultimate Summer Sandwich

Thanks to the Foodbuzz Tastemaker Program, I received 2 packages of Arnold Sandwich Thins and a challenge: Create my ultimate grilled summer sandwich and post it.

I’m not one to turn down a food-related challenge. And having these waiting on us when we got home this weekend gave us the perfect excuse to grill Saturday night.

I think we’ve perfected our Ultimate Summer Burger!

Nick mixed up the burgers while I prepped the toppings.

The burgers:

  • 1 lb. Laura’s Lean Ground Beef
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1-2 Tbsp Worchestershire Sauce
  • 1/4 cup raw oatmeal
  • 1-2 Tbsp chili powder (ancho, if you can find it)
  • 1.5 tsp garlic powder
  • 1.5 tsp smoked paprika

Mix together, form into 4 patties, make a finger indent in the middle of each one and let rest on a plate until ready to grill.

While Nick manned the grill, I got out the toppings:

  • local lettuce
  • heirloom tomato (from our own garden!)
  • sliced red onion
  • sliced avocado

and the KEY topping that made these burgers: cilantro mayo.

For the mayo, I just mixed 1-2 Tbsp of olive oil mayo with 1 Tbsp chopped fresh cilantro.

The fresh cilantro added just the right summery punch! The burgers were cooked perfectly and brimming with smokiness from the grill, chili powder, and smoked paprika. Both the avocado and tomato kept the flavors bright, and the sweet bite of the red onion tied everything together.

I wish I had another one.

  1. Now this is the ultimate summer burger. Enjoy these last weeks of summer with food like this. Pretty soon, burgers on the grill will be a thing of the past. :(

  3. Welcome back! I think grilled eggplant maybe or a black bean veggie burger. I wonder if eggplant and avocado would taste good together.

  5. I love that your sandwich is so thick and juicy. I see so many teeny tiny sandwiches on the thins and they don’t look very filling but that looks so satisfying and yummy!

  7. Seriously, I wish I had one too! I love cilantro spreads and avocado on burgers is always a winner in my book!

    My ultimate summer sandwich…I’ve been craving a grilled sandwich with fresh mozzarella and garden fresh tomatoes. A little fresh basil would knock it out of the park. Ultimate summery fare for me!

  11. that sandwich looks phenomenal! makes me wish i ate meat! hehe! i would def love a black bean burger with fresh garden tomatoes, super sharp cheddar cheese and red leaf lettuce…hrm….how have i not made this yet!? i should do it w/ my own AT’s!!!

  13. Sandwich looks amazing!
    Mine would have roasted eggplants and zucchini, a slice of ham, slice of good melty cheese and some tomato sauce.

    Or maybe sweet potato and avocado, that’s one amazing combo too :)

  14. No sandwiches for me but I do still love a good burger anyway. I have just been layering them with big leaves of lettuce and all sorts of good burger toppings!

    That mayo sounds great.
