Ah! Today is my last day of work for a week and a half :) !!! Can’t say I’m sad about that.
Now that we’ve been packing and getting stuff ready, I’m just itching to go.
Still can’t believe the trip is already here – it has totally snuck up on me this year and the summer has flown by.
To help use up food in the fridge, I made a huge batch of overnight oats for breakfast this morning.
I’m not worried about leaving some eggs or tortillas in the fridge, but I definitely want to use up the opened almond milk, yogurt, and fruit so I won’t have to throw it away.
Today’s mix could be my best yet!
- 1/2 cup oats
- 1/3 cup plain Almond Breeze, 1/3 cup unsweetened chocolate Almond Breeze
- pinch of salt
- 1/2 tsp vanilla
- 1 tsp chia seeds
I mixed the base up last night and let it sit in the fridge overnight to thicken up.
This morning, I mixed in the rest:
- greek yogurt
- sprinkle of walnuts
Not sure what I would do without overnight oats some mornings – they’re a lifesaver on busy days!

She’s not supposed to be on the couch unless we tell her to get up. I walked into the den to check on her after I put my breakfast together and found her curled up in the corner, on the pillows.
Then she gave me the stink eye :)
It’s a good thing she’s cute ;)
