Do you ever have those days where you cross a lot of stuff off your to-do list, but you keep adding new stuff?
I got a lot of things done today, but I think I added more to the list than I actually finished!
Most of the items on the list are easy to do – I just need to do them. That’s the hard part ;)
While working away this afternoon, I made a big yogurt bowl to use up that yogurt + fruit.
I had about a half cup of greek yogurt, one chopped nectarine, and 2 small vegan cookie bars I took out of the freezer.
The bars were awesome out of the freezer! I took them out of the foil, put them on a plate and heated them up in the microwave for about 20 seconds. Perfect!
And finally – the work day was over! I worked on organizing our pile o’stuff that is downstairs waiting to be packed, switched a load of laundry, and played with Maggie until Nick got home.
Then – dinner.
I think I’ve reached a new level on my Mexi-grains!
I’m not exactly sure how I ended up with this meal.
The plan was to make this Bacony Barley dish with beans instead of shrimp.
But once I started cooking, I realized I forgot to use the bacon in the beginning so I just threw together a bunch of stuff from the fridge – and it worked!
I browned some Laura’s Lean Ground beef with garlic, salt, smoked paprika, and ancho chile powder and then took that out of the pan. To the same pan, I added 3/4 cup Israeli couscous and 1/2 cup quick cooking barley along with about 1.5 cups of water.
Once the water came to a boil, I let the grains simmer while I chopped some lettuce, tomatoes, scallions, cilantro, corn, and avocado.
When the couscous and barley was cooked, I added in the corn from 3 cobs, 1 can of drained/rinsed pinto beans, the ground beef, scallions, cilantro, and some halved tomatoes.
Served over green leaf lettuce.
I have had a lot of greens today! We have more in the fridge than I realized, so I’ll be having a salad with almost every meal until we leave.
As soon as we were done eating, we took Maggie to the park to run.
After about 30 minutes of walking around with her, throwing her Kong, and having to find it ourselves a few times, we came home and made dessert!
I whipped up a milkshake for Nick in the HealthMaster and made myself an awesome ice cream sundae.
3 little scoops of coconut milk ice cream with some Ah!laska chocolate syrup, a few dark chocolate chunks, and some almonds.

- pack my lunch / snacks
- prep breakfast

OMG, that picture of Maggie running through the park is darling!! She looks so happy! :)
I just had a bowl of ice cream myself…..great ending to my day.
so del coconut milk ice cream is one of the most fabulous dessert treats ever, hands down! yum :)
Almond Joy candybars are my favorite for sure–good idea! :-)
