A Little Manic

I have such a long to-do list and so little time!

This is the type of day when work just gets in the way of life ;)

Work has been going well and hasn’t been too crazy today, so that has definitely helped.

In a quest to waste the least amount of food, I’m going to try to clean out the fridge as much as possible before we leave Wednesday.

Today’s lunch included a HUGE salad of romaine, spinach, carrot, red onion, scallions, and tomatoes with a quick homemade dressing (olive oil, balsamic, dijon, salt, pepper, oregano).

Plus leftovers of the whole wheat pasta, tomato and basil mixture from last night. This will also be lunch for me tomorrow (and Nick, possibly) so we can make sure it gets eaten.

Even the simple meals can be tasty, and this hit the spot. It didn’t hurt that it took almost no time to get ready! I had lettuce already washed/chopped from last night along with chopped carrot, scallions, and red onion and the pasta just needed to be reheated. Easy!

Back to my to-do list:

  • Finish working at 5
  • Laundry
  • Vacuum
  • Start packing
  • Dinner
  • Pack lunch/snacks for tomorrow

  1. I always plan so far ahead. I like to pack a day or two in advance and it’s all about the lists!

  2. I adore making lists, so I just make a list of everything I need to do and pack, and check it off, slowly but surely :)

  3. I always make a healthy whole-wheat pasta when I need something super quick! Yours looks great!

  4. Theres always soooo much to do before leaving for a trip- it can get pretty crazy!! Lists always help..and getting started as early as possible, too.

  5. A “to-do” list is the only way I manage! Just like Marina, I love making checklists and then checking things off as I complete them. You will do everything in time–good luck!! :)

  6. Yes, LISTS! They help when packing before the trip to make sure you don’t leave anything behind at home, but also at the end of the trip so that you remember to bring back home everything you had taken along with you.

    My go-to healthy food is veggie wraps. Hummus and/or avocado to spread onto the wrap, then filled with veggies, sometimes with tofu too. Super super yummy too!!!

  7. Super-fast (and cheap) meals usually involve a baked sweet potato, salsa, hummus and/or whatever leftovers I have on hand, combined and warmed up.
    I’m a compulsive list maker before trips. I also pack days in advance with more than I actually want to bring, then slowly edit my bags until they’re a reasonable size…I have an unnatural fear of bringing too much stuff, and I’m always struck by the whole “you lived out of a small backpack for a year and a half in Africa” guilt thing when I go anywhere these days!

  8. My favorite super fast and easy meal hmm. Probably random skillet concoction,veggies, pasta or rice , sauce.
    Or chicken breasts and a big salad.

  9. I come home from work for a 40-minute lunch every day so super fast healthy lunches are my specialty. My go-to’s:
    – Hummus wrap with fresh veggies and sometimes a little feta (if I have an extra 5 minutes, pressed in the George Foreman)
    – Fried egg (or egg white) sandwich with spinach and tomato on whole wheat bread
    Good luck with all your preparation – lists always help keep me on track while prepping for a trip. I almost always forget something, but that can usually be fixed. Remember the passports and you’ll be just fine!
