The Strangest Yet

Happy Friday! I’m still not feeling 100%, but it seems a tiny bit better than yesterday so that’s a good thing. I’m hoping this weekend will give me time to rest and fully recover before we head out to Honduras on Thursday!

Last night, I got to do something I’ve been wanting to do for a long time – can tomatoes!

I was eating dinner and my neighbors came over and asked if I wanted to watch/help them can some of their tomatoes. So I finally got out of my pajamas and into real clothes and headed over for the evening.

It was so much fun! I did take pictures, but I haven’t gone through them yet – expect a full report soon! It was a nice way to end my day.

As for dinner last night, it may have been my strangest yet since starting this blog.

I had no desire to eat leftovers and we don’t have much else in the house that would be quick to make, so I went with oatmeal.

But I also wanted a smoothie. Dirty one dish or two? I chose one :)

I cooked 3/4 cup of oats in half water/half almond milk and added some vanilla and cinnamon at the end.

While the oats were cooking, I made a green smoothie with 3 cups of spinach, 1 frozen banana, ice, and a splash of almond milk.

Then I layered!

Oats on the bottom. Smoothie. Rest of oats on top. A few dark chocolate chunks, just for fun.

Ridiculous. Maggie is obsessed with Roxy, for some reason. She sees her every day, but if she is outside where she can see her, she just goes crazy.

As for breakfast…it’s probably not the best thing to eat when my stomach is still acting weird, but I’ve been waiting for this since last weekend.

My little sister and I got this Nutella jar to the right level last weekend after smearing it on our pancakes :) It’s been sitting in the cabinet all week, waiting to meet its fate.

And what better day to have a fun and super chocolatey breakfast?

  • 1/3 cup oatbran
  • 1 cup water
  • pinch salt
  • cinnamon
  • 1/2 banana
  • handful raspberries
  • about 2 Tbsp Nutella left in the jar

I actually ate my breakfast AND wrote this post in the car on the way to work! It was a rushed morning ;)

Time for coffee + work!

  1. I like the idea of combining two dishes–the oatmeal/smoothie combo definitely sounds/looks interesting…but I can’t see how it wouldn’t be good!!

  2. I’ve never thought about combing oatmeal & a smoothie before! I bet it was a nice hot/cold contrast :)

  3. That picture of Maggie and Roxy is so cute. Our dogs don’t mind other dogs unless they are leashed then they think they are attack dogs and go nuts!

  6. I used to eat nutella like it was nobody’s business. I actually started to get panic attacks from eating so much chocolate though! haha. Maybe it was a bit too much nutella.

  7. Don’t get me started at how much I love nutella! I know it’s not the best stuff for you but it’s oh-so-yummy!
