Breakfast Rocks

I feel like I’m so behind on blogging lately, but I think I’m starting to catch up. I’ve had so much prep work to do before our trip next week – plus I have a lot of fun things happening soon – so I’m just working through it all, one email, letter, and package at a time.

Thank goodness for filling, healthy, and balanced meals! They’re my saving grace lately, and I need all the sustenance I can get.

This morning was the one of the most ridiculous mornings I’ve had in a long time. I just could not decide what I wanted for breakfast. I went back and forth, back and forth, until I finally just started getting stuff out of the fridge and cabinets.


I ended up with a great meal, but it took me forever! Definitely could have used that time to finish getting ready on time.

One oatmeal/egg white pancake with almond butter and half a peach that I split with Nick.


Plus a long overdue green smoothie.


I can’t believe I got fruit, vegetables, lean protein, and whole grains all in one meal. And it tasted good, too.

It’s no surprise that breakfast is my favorite meal. I love it all – sweet and savory, carbs and protein, and the occasional chocolate thrown in there ;)

Some of my favorites over the past year and a half?

Sourdough pancakes.


Breakfast Pizza.


Overnight oats.




Banana Splits.


Good old oatmeal, fruit, and nut butter.




Homemade biscuits with eggs and fruit.


French toast.



Now I want breakfast again.

  4. I love VOO with banana softserve. Actually I love any form of oats for breakfast. I prefer to have savory breakfast dishes like eggs for lunch or dinner or snacks. Oats make me happy :)

  7. If we go out to breakfast I always order an omelette.
    I hate chopping all the veggies myself.

  8. I love breakfast too! But I prefer eating it for lunch or dinner :) I was just thinking about how long it’s been since I’ve had a green smoothie and added the ingredients to my grocery list. Can’t wait! You make the best-looking breakfasts ever :)

  9. Ohh I love this post! Breakfast is my all time favorite :) Even though oatmeal’s the only thing that ever gives me energy or fills me up..I still look forward to it every day!

I am nowhere NEAR as creative as you in the breakfast department! :) Lately, I’ve been sticking with my healthy, filling standby: 0% Greek yogurt with gluten-free, high-protein cereal and fruit (usually strawberries and blueberries). Keeps me full and happy for hours! Good luck getting everything done!

  11. Breakfast is my most favorite, too, but I usually stick to cereal mixed with greek yogurt – I love it too much to give it up!! I guess that’s why I have breakfast for dinner so much – eggs and toast or banana pancakes! :)

    I’m REALLY boring when it comes to breakfast. Pretty much every day for the past year I have had oatmeal, yogurt, nuts and/or fruit. But I do eat “breakfast” foods like omelets and eggs for lunch and/or dinner quite often… :)

  13. I am so glad I’m not alone in the decision making department. I will stand and stare at the pantry for SO long trying to decide what to make for breakfast! I am usually trying to decide between a veggie & egg scramble w/ a whole wheat english muffin, PB and banana oat bran, or kodiak banana pancakes. Oh, or a veggie and egg sandwich! See I just lOVE breakfast!
