I feel like I’m so behind on blogging lately, but I think I’m starting to catch up. I’ve had so much prep work to do before our trip next week – plus I have a lot of fun things happening soon – so I’m just working through it all, one email, letter, and package at a time.
Thank goodness for filling, healthy, and balanced meals! They’re my saving grace lately, and I need all the sustenance I can get.
This morning was the one of the most ridiculous mornings I’ve had in a long time. I just could not decide what I wanted for breakfast. I went back and forth, back and forth, until I finally just started getting stuff out of the fridge and cabinets.
I ended up with a great meal, but it took me forever! Definitely could have used that time to finish getting ready on time.
One oatmeal/egg white pancake with almond butter and half a peach that I split with Nick.
Plus a long overdue green smoothie.
- 3 cups spinach
- 1/2 banana
- 1 cup Almond Breeze
- sprinkle of pb2
I can’t believe I got fruit, vegetables, lean protein, and whole grains all in one meal. And it tasted good, too.
It’s no surprise that breakfast is my favorite meal. I love it all – sweet and savory, carbs and protein, and the occasional chocolate thrown in there ;)
Some of my favorites over the past year and a half?
Good old oatmeal, fruit, and nut butter.
Homemade biscuits with eggs and fruit.
Now I want breakfast again.
