Mongolian on Monday

This afternoon and evening has been busy!

I finished work at 5, have been working on laundry, went running with Nick, made and ate dinner, folded laundry, prepped lunch for tomorrow, and just sat down to blog – already in my pajamas ;)

I did make a smoothie this afternoon. That salad was huge and delicious, but I was ready for a snack around 3:30 today.

Loving this unsweetened chocolate Almond Breeze! I love that little hint of cocoa, and am really happy they offer it in unsweetened. I’d rather be able to add my own sweetener if I want it, so this is perfect. I can’t wait to try it in coffee!

As for dinner, I found this recipe for Mongolian Beef last week (on one of my new favorite blogs) and immediately put it on the meal list.

And mine actually looks pretty close to the picture! Don’t you hate when you make a dish and it looks nothing like the picture you saw?  That happens to me all the time.

We had ours over Israeli couscous with sugar snap peas, peppers, and onions on the side.

Make this. You’ll be happy you did.

And I think the sauce would be delicious on anything: chicken, pork, tofu, or with beans.

I’ve got to get the leftovers put away, and Nick’s doing dishes. Then it’s time to relax. It’s been a long day!
