Egg Spread

Am I the only person that drools over every recipe The Pioneer Woman puts up?

I saw these Make-Ahead Muffin Melts yesterday and wanted one, right then and there.

And good for me – I already had 4 hard boiled eggs in the fridge waiting to be turned into this masterpiece.

I didn’t have all the ingredients on hand and I did “health” mine up a little, but they still turned out amazing! I love the idea of having this mixed up and ready the night before.

All you need to do is spread, broil, and devour.

Breakfast Egg Spread modified from The Pioneer Woman’s Make-Ahead Muffin Melts

Serves 3-4

  • 4 hard boiled eggs, peeled and chopped
  • 2 slices canadian bacon, diced and crisped up, then cooled
  • 1 cup fat free greek yogurt
  • 1.5 tsp dijon mustard
  • 1/4 tsp garlic powder
  • 1.5 oz colby jack, shredded
  1. Mix yogurt with dijon and garlic powder.
  2. Add chopped eggs and cheese to yogurt mixture.
  3. After canadian bacon has cooled, stir into egg mixture.
  4. Let sit in refrigerator overnight.
  5. In the morning, spread on bread/english muffin and broil  3-5 minutes or until hot and bubbly.
  6. Serve!

We had ours on some Nature’s Pride Whole Wheat Bread with local peaches and berries on the side.

The verdict?

Delicious, but I’m going to play around with the yogurt to cheese ratio. I definitely didn’t have the same cheesy crust on mine, but I love the mix of eggs, yogurt, dijon, garlic, and ham!

I love having eggs for breakfast, but it’s fun to find new ways to make them.

In other news…

Notice how dark my pictures are this morning? Today was disgustingly gray and stormy when we woke up, and it seemed to have taken a hold of the entire day until we got to work.

You know those days that just start off wrong and you don’t know why? That would be today.

It was a crazy morning, Nick started his new job today (yay!), but it was a little strange and a frustrating morning with some things around the house. Then I got to work and realized that Nick had my car keys, which meant he also had my office keys…

Good thing my boss has a master key to everything.

But the weirdest thing about today has to be the dream I was having right before I woke up this morning.

In the dream, Nick and I were touring some huge house and we met the owner who then introduced us to his middle school-aged son and wife.

Somehow, I ended up in a very heated argument with the boy about whether Virginia Tech or Boston College was better in football! I also called Matt Ryan Matt Fowler in my dream (too much White Collar lately?), but I totally recognized my mistake, even in my dream. Ridiculous, right?

Guess that means I’m ready for college football to start already ;)

    She’s one of the first blogs I read and her cookbook was purchased in multiples for gifts this past holiday season. My family loves her!

  4. I have so many bizarre (and sometimes disturbing) dreams that I can’t even pick just one. The Pioneer Woman’s recipes aren’t usually vegan-friendly, but I still like looking at her blog anyway. She takes such pretty photos.

    Last night I had the craziest dream. My (really hot) math teacher from high school was at this camp with me and some other kids from my high school. We were talking about food and I told him that I couldn’t have any canned stuff cause it hurt my stomach. The conversation wasn’t weird, just the people in it. I haven’t thought about high school in such a long time.

  10. It’s so funny you asked about weird dreams because I had one last night (thought I cannot remember when I haven’t had one). In it I dreamt that my ex boyfriend got back in touch with me and I went to Frank from The Bachelorette for advice. Random!

    Weird dreams are the best and super funny to think about. I think if I had yours I would have woken up laughing! I’m more than ready for football season, too. Even though I don’t go to the games here, it’s the atmosphere around campus that I really love!
