Shred and Sunday Supper

Is it really the end of the weekend already?

I promise – if I’m ever President – all weekends will be 3 days long. I need a day for just rest!

Yesterday was non-stop: running, market, groceries, walking/swimming, cooking, driving, seeing friends.

Today was full, too: breakfast, church, lunch, prepping for the week, shredding!, laundry, stuff around the house.

I need a day each weekend just to recover, right?

Breakfast was pretty similar to one I’ve had earlier this week.

Eggs over oatbran. Canadian Bacon. Local peach.

This + a few cups of coffee + cuddling with Maggie = perfect Sunday morning before church.

Nick and I came home for lunch today, and I worked on getting rid of some leftovers.

I had the last 2 pieces of the egg bake from Friday night, along with a fabulous salad!

I used our first tomato today!

Our Cherokee Purple tomato plant isn’t doing too well, but we did get one tomato off the plant earlier this week and I finally sliced it today.

It was amazing. There really isn’t anything like a fresh, ripe tomato. I topped my local greens with the sliced tomato, red onion, and a homemade dressing of oil, dijon, and balsamic.

This afternoon, I’ve been busy!

3 loads of laundry.

Putting fresh sheets on the bed.

Making + drinking a frozen mint chocolate “latte”:

  • 1 cup leftover, cooled coffee
  • 1/2 cup milk
  • 1 cup ice
  • 1 Tbsp cocoa powder
  • 1 tsp vanilla stevia
  • 1/4 tsp peppermint extract

Making yogurt in the crockpot (still working).

Prepping stuff for this week.

And then…

I decided to do Jillian’s 30 Day Shred, Level 1.

I’ve had the DVD for a while but hadn’t taken it out yet, and I randomly had the motivation to do it! We didn’t get to go running this morning, so I thought – what the heck.

Now I know why people said they scream at her during the workouts :) It was awesome! It reminded me a lot of Body Pump, just crammed into 20 minutes. I really enjoyed it! I don’t know if I’ll be doing it every day, but I do like knowing that it’s a GOOD workout that really gets my heart rate up in only 20 minutes.

As for dinner, it’s what Sundays are made for.

I made a ground beef and bulgur filling to put in some roasted pepper halves with Laura’s Lean Ground beef, crushed tomatoes, bulgur wheat, oregano, garlic, onion, and smoked paprika.

And both of side veggies were local!

Local okra from the market, sliced and tossed with some seasoned cornmeal before roasting at 375 for about 30 minutes.

And some local corn I picked up this weekend, too. Boiled for just a minute and tossed with a little olive oil butter, salt, and pepper.

Delicious. I love sweet corn – especially the bicolor variety.

It just started storming here. Lightening, thunder, the whole deal. I’m happy it waited until tonight to start. I hope it rains all night long and turns our grass green again!

    Have you ever tried roasting corn in the oven? I did it recently and the corn is to die for. You just leave it in the hull and roast directly on the rack (or on a baking sheet) for about 30 minutes. Heaven!

    I just HAD to comment on that okra! Since my dad is from Alabama, I never thought of roasting it. I’m definitely trying that out!

    yea i know a lot of people would vote u in as president because this weekend 2 day situation needs major improving. cuz saturday is usually about errands and winding down from a work week .. and sunday is getting prepared FOR the work week.. we need a day in between to actually REST and have fun! lol

  10. Sounds like a full but wonderful weekend!
    I love the shreds! I don’t think that they are any more difficult than a body pump class, but they are pretty intense! I think Level 2 is the worst. Level 3 is actually my favorite.

  11. I dont know if I could do such an intense workout at home. Gym time’s no problem but there’s so many distractions at home! lol Sounds like kick butt one, though!

  13. I like the shred because it incorporates cardio into the workout. Body Pump is only lifting.

    I’d love to do the shred right now or body pump for that matter but my ankle is chaining me to the couch. I will live vicariously through you!
