Lazy Rain

It’s finally raining here! It’s been raining all morning, and we couldn’t be happier. Our yard has been brown and brittle for a few weeks now, thanks to the high heat and lack of rain.

Our tomatoes will be very thankful for this weather, and so will we!

I could not decide what I wanted for breakfast, so my lunch today was the breakfast idea I turned down for that oatmeal pancake :)

Mexi-Eggs!

The layers:

  • oatbran
  • fat free refried beans
  • over easy eggs
  • salsa
  • red onion
  • avocado

Served with a side of sauteed zucchini and squash.

Eggs + veggies + oatbran is one of my favorite combinations!

The perfect warm lunch on a dreary, rainy day.

 

Work is bu-sy today. Non stop. Had a few little emergencies pop up, but it seems like the afternoon may calm down a bit?

 

Either way, I’ve got yogurt working in the crockpot as I type – can’t wait for that to be done later tonight.

  1. I had the most wonderful eggs over cheesy polenta with tomato sauce at brunch a few months ago—if you haven’t tried that combo before, you must!!

  3. I have been so stuck on eggs lately. I just can’t seem to get enough! And homemade yogurt in the crock pot?! Can’t wait for that!

  5. Random mornings where I can’t figure out breakfast are the worst. Especially since I’m such a slug in bed. I like to have premade stuff on hand.

    I’m always impressed that you come up with such fun food.

  8. Way to make your own yogurt!
    Do y’all experience the traditional Southern squash overload in your town? I read about it in Animal, Vegetable, Miracle way back in the day, then when I moved to North Carolina found out that a). squash really are ridiculously abundant and seem to grow overnight and b). neighbors do try to unload them on you. Wanted or not.
