Happy Saturday!

I hope your weekend is off to a good start.

We had a fun time last night – dinner with Nick’s labmates after his last day of work. It was good to meet some of the new people and spend some time with ones I’d already met. We ended up getting home around 11:30 and crashing right into bed.

And this morning was pretty lazy ;) But so needed!

No alarm clock. And not even a run this morning. It was raining when we first got up, so I’m hoping we can have a run before church tomorrow.

After making coffee in the syphon…

I made myself one big oatmeal pancake!

Pancake mixture:

  • 1/2 cup oats
  • 1/2 cup egg whites
  • pinch salt
  • cinnamon
  • baking powder

Today’s toppings were some greek yogurt and 2 diced apricots from the farmer’s market.

After watching some One Tree Hill with my coffee, I drove out to town for groceries and a trip to the farmer’s market.

I got some awesome produce today at the market!

  • local peaches
  • local wild wineberries (they look like small raspberries)
  • local blueberries
  • local okra
  • local zucchini/squash
  • local potatoes
  • local nectarines

I also bought some local flat iron steak for a meal this week – I can’t wait to try it!

Lunch turned out to be pretty random.

I had a serving of the wheatberry salad left, so I tossed in another sliced zucchini and some leftover free range chicken.

It was still delicious, and I didn’t have to waste any food!

 

Nick and I are playing with Maggie and will be getting ready to meet his parents in Roanoke for dinner tonight. They have my birthday presents, and we’re going to a new restaurant – should be fun!

  2. I love that your farmer’s market has such variety. I want to travel to a bigger area for a large farmer’s market since ours is adequate but not great.

  3. I love recycling dishes like that. Add a few new ingredients and boom, it’s a new meal!

    Lucky girl, I envy your farmer’s market. I stopped by mine this afternoon, and it was the exact same selection as my supermarket. Nothing was local, not even home-grown, and the prices were about the same. Bummer :/

  11. Wow- you got some great loot at the Farmers Market today. Unfortunately I was a bit late getting to my CSA pickup so I didn’t get a ton- just carrots and beets.
