Happy Saturday!

I hope your weekend is off to a good start :)

I’ve got to backtrack and show my lunch from yesterday. Nick and I had plans to go out and we ended up having to change the place last minute, so we ended up at Our Daily Bread for lunch – it was amazing!

We love this place anyway, but both our lunches were awesome. I got their tomato/balsamic/feta/basil salad and one of their hot sandwiches of the day:

All on their freshly baked bread :) It was one of the best sandwiches I’ve ever had. I would never put black beans with feta, but I loved the combo and am planning to do it my way very soon.

We had a lazy night at home last night – just what we both needed.

I had 2 chicken sausages in the fridge so we cut up a  bunch of veggies and grilled those along with the sausages.

I love meals on the grill – I don’t have to do much in the kitchen ;) Although, I did cook up the last of our Israeli couscous, but that was super easy and quick.

We had grilled green and orange peppers, red onion, zucchini, and yellow squash that we marinated in a little olive oil, balsamic, garlic, oregano and salt.

I actually sat down to blog last night, but once I took Maggie out for a bathroom break, we ended up standing out in the road with our neighbors and we talked for 2 hours! I know I complain about the lack of good shopping (it’s sad here – no good mall, no WF, no TJs, no Kohls…) but I do love where we live. Our neighbors are so friendly, and we talked about everything last night: jobs, gardening, canning, hunting, fishing, neighbors.

I also saw a shooting star last night! It was a good way to end the work week.

And today is off to a great start!

Nick and I went running this morning. For real! It’s the first time we’ve gone in almost a month. Those weekends we were out of town really got us off our schedule, and it felt great to get out there this morning and run along the river.

I was extremely slow, but it felt good and I didn’t get any cramps/side stitches so I was happy.

After we got back from running, I showered and got working on my latest sourdough project:

Sourdough Biscuits.

No recipe yet ;) Mainly because I didn’t really measure anything. And because I’m keeping it a secret.

They were delicious. Fluffy. Sour and a little sweet. Flaky. Full of butter and worth it.

I topped mine with some homemade blackberry jam I got from our neighbors last night and some honey butter.

While I worked on the biscuits and cut the berries, Nick cooked bacon, eggs, and the coffee.

We just finished eating lunch (big salad for me and a smoothie I split with Nick) and I just got the groceries put away.

The farmer’s market was bustling this morning! And I scored some awesome produce:

  • apricots
  • peaches
  • raspberries
  • Red, White, Blue berry mix: blueberries, red raspberries, golden raspberries
  • zucchini
  • red potatoes
  • yukon gold potatoes
  • rainbow chard
  • mixed greens
  • plums

As for the rest of today, I think it’s going to include some laundry and stuff around the house. We’re probably going to do some outside stuff tomorrow and Monday with Maggie (hiking? trip to Glen Alton to swim/run?), so I’m going to try to get some inside stuff done today.

PLUS! I’m doing a bunch of scratch made stuff this weekend, too.

My plans:

  • Soak/cook garbanzo beans for meals/lunches
  • New idea for wheatberry/veg salad for lunches
  • Crockpot yogurt with local milk!
  • Recipe trial for vegan oatmeal cookie bars

PS: Do you know about Andrea’s HomeSpun Sundays? I love the idea, and it totally goes along with my scratch made series. I’m in!

    I want the recipe for your biscuits! All of your food looks sooo good today!

  2. That dinner looks so colorful. You’re making me wish I had a grill here! I think we live in the same shopping wasteland too…I have to drive into Tampa or Orlando for anything decent! I guess that’s the beauty of online shopping, I guess…

  5. Wow you definitely got some good produce! Those grilled veggies look amazing lady! I can’t wait for your sourdough biscuit recipe! I’m not sure what I am making for the weekend but hopefully lots of simple grilled veggies and maybe a raspberry blueberry crumble for dessert. have a great one!

  6. Happy 4th of July (weekend)! J and I are having a bbq tonight with organic, free-range chicken breasts, LOTS of veggies (peppers, mushrooms, corn), and (of course) tons of fresh fruit (watermelon, strawberries, peaches). Enjoy your long weekend! :)

    This weekend I made homemade bean burgers and went to the farmer’s market. I don’t know what we will actually do on the 4th but tonight was fun for us.

  10. Black beans + goat cheese is also another surprisingly delicious combination (add some sweet potato, and watch out!) :)

    I am having a lot of trouble deciding what to make for the 4th…holidays give me lots of unnecessary performance anxiety.

  12. Yay for making things from scratch. I’m pretty sure most of friends think it’s insane that I always make brownies from scratch. They are so easy, the ingredients are always on hand, and everyone raves about how good they are. I hope there’s a biscuit recipe soon.

    i was going to make a blueberry loaf but im realizing my figs are almost fully ripe so i’ll have to make muffins soon!
