Friday Flapjacks

Friday is made for fun breakfasts, right?

I think so.

There’s a 3 day weekend ahead, and I’m ready to get it started.

The only thing I could think about this morning was oatmeal pancakes.

The pancakes were my normal mix:

  • 1/2 cup oats
  • 1/2 cup egg whites
  • pinch salt
  • cinnamon
  • 1/2 tsp baking powder

I split the batter in two, cooked them up in the skillet and then layered them with Coconut Milk Kefir, strawberries, and peaches.

I don’t ever think of pancakes as being summery, but these definitely tasted like summer!

 

PS: I have a ton of zucchini + yellow squash from our CSA this week and need ideas!

  1. Awesome! It’s hard to ever go wrong with pancakes..they’re good anytime of year or day. :)
    I don’t have any actual “recipes” for zucchini, but lately I’ve been eating them in fry style (like everything else)..tossed in a lil olive oil and sprinkled with seasonings. They get super sweet and crispy!

  2. Make stuffed zucchini!! Ground beef, brown rice, crushed tomatoes, seasoning; stuff mixture into zucchini boats :)

  5. I just love how versatile zuchinni and squash are. But really, my fav way to have it is just cut in half, season it with olive oil and some greek seasoning, and throw it on the grill- simple and fantastic!

    I made a really good Zucchini/Squash Rice Casserole last weekend, definitely gets two thumbs up from me.   9. Oh–we love to slice it really thin and then grill it with a little salt and pepper. And then there’s this casserole that my husband can not get enough of: http://bit.ly/xhscL. I usually cut it in half, but keep the sauce the same. Oh and I add as much zucchini/squash as I feel like it needs–usually about double the recipe.

  10. I’ve been using zucchini and yellow squash in peanut noodles and it’s been rocking my socks! I pan-steam the veggies and they always come out perfect!

  12. i LOVED hearing your vegan thoughts! i do have one question – did you find it more expensive? i mean, did you spend more money having bought a lot of the coconut milk products, etc?

    • Great question!

      I actually didn’t spend any more money than our normal grocery budget. I was still buying meat for Nick during the week, but less because he was the only one eating it.

      Most grains/beans and things we had in the house already, like normal.

      And honestly, ounce for ounce, buying that coconut milk kefir was the same price as if I had bought the same amount of greek yogurt – and the kefir has lasted me longer!

  13. i like zucchini with a little olive oil and balsamic on the grill…
    and when i was a kid my mom would make basically zucchini soup-she’d chop up zucchini and cook it in milk with a little butter and salt and pepper. kinda weird, but i loved it

  15. Oh I love zucchini and squash! I really like it marinaded and roasted or grilled. I also add it to everything from soups to stir fry to noodle dishes. Yum! :) You can also make pancakes out of them, sort of like potato pancakes, just using zucchini instead.

  16. When I was younger my mom made a fabulous zucchini bread recipe with a huge zucchini our family friend gave us.

    have you ever tried calabacitas? it’s one of those flavor combinations that’s suprisingly delicious. everything goes together so well!

    plus, it’s an easy recipe where a lot goes. just sautee zuchini and squash with corn and fresh green chile, and top it with a little cheddar cheese. it’s the most summery meal around.

    i also occasionally add potatoes and/or onions. but it might be the best, simplest. it’s even better the next day!

  20. My favorite way to eat zucchini and squash is to slice it into rounds, saute it in a pan w/ some olive oil, some onions, S&P. When it is browned nicely, dump in a drained can of petite diced tomatoes, add a sprinkle of red pepper flakes, and a dash of garlic powder. Cook it down some more until it is all thick and delicious. I could eat this by the bowlful! If you have fresh tomatoes, you can use those instead of canned, and it is just as tasty. Also you can throw in leftover cubed chicken, or steak, even fish or shrimp, and it all tastes good. A one pot meal!

  21. I had an abundance of zucchini this week and I actually sauteed it and added it to chunky white potato hash browns with peppers and onions. I served it with a fried egg on top. Great way to sneak veggies into an otherwise totally indulgent breakfast. I want to try this one too:
