Mexi-Monday

Today is going to be a great Monday!!! My little sister and her husband come home from Spain today :) I won’t be able to see them when they get in, but I’m so excited that I’ll actually get to see them soon!

Plus, they’ve been traveling all over the place, so I can’t wait to see pictures and hear stories.

And it’s always a good day in my house when I get to make some sort of Mexi-bowl.

Mexibowl = anything and everything I have that I can turn into a big fiesta of a meal :)

That usually means that they happen when we have refried beans in the house.

You can’t really see it in the pictures, but the base is oatbran.

Oatbran is delicious with savory dishes! Especially with meals like this one.

The layers:

  • Oatbran made with water, salt
  • fat free refried beans
  • sauteed zucchini/yellow squash with salt, garlic, and ancho chile powder
  • diced tomato
  • avocado
  • scallions
  • cilantro

I love the mix of flavors, textures and temperatures in this bowl.

The oatbran, beans, zucchini and squash were hot. The tomato was room temp, and the avocado was cold.

PS: Maggie knows it’s Monday, too.

What’s your favorite cuisine?

I love Mexican, but I wish I could find a restaurant that would make meals like the ones I make at home! It’s hard to find good Mexican that isn’t super greasy.

  2. I am still dying to try savor oats. Yours always look so good!

    Ugh, such a hard one. I think when it comes to Mexican, I can eat and eat until I’m about to explode! I love Thai but I can usually control myself with that.

  3. I love Mexican and Thai the most!
    Italian is hit or miss. There are very few really good Italian places, I usually feel like I can do just as well or better at home.
    Ethiopian is my other favorite. I could eat it all the time!

  5. I was just thinking today that I havent seen savory out bran on here in a while. What a coincidence! My favorite cuisine is a tie between Thai and Japanese. I think I could eat curry and sushi every day :P

  6. Right now I love greek food. It is the flavors I crave and lots of veggie options.

  7. I love Mexican but I am picky and usually only stick to a couple items , so I’d have to say my favorite cusine is Italian!

    Love it.

  8. My favorite is Japanese, but I haven’t had much of the other cusines, or much of Japanese except sushi :))
    Savory oat bran with all of this is great, I eat similar combos pretty often, and I adore it!

  10. Any kind of Asian cuisine is definitely my favorite. I love Chinese, Japanese, Indian, and Thai food.

  11. i love to say the word ‘pintos refritos’ .. but love to eat them more! or black bean refried beans <3 both are super yummy! perfect in ur monday mexi salad!!!

  12. Hmmm. I’ve never taken my oats in a savory direction although this sounds interesting. I know there is no reason they cannot be savory, but for whatever reason I have a really hard time with it! I love all different kinds of cuisine but hear you on Mexican. Although, I have to say, it seems mostly like the American version of Mexican food is so greasy. Whenever I bring home cookbooks I see a lot of dishes that are much fresher than what I find in restaurants. Already I have plans this week to make stuffed chiles with a creamy walnut sauce. This one does happen to be a little on the fatty side, but hoping my tricks to lighten it will help!

  13. I would probably have to say Italian is my favorite cuisine (pizza! gelato!) – but Mexican is up there…love the look of your Mexi-bowl! Nice and refreshing…yum!

  14. I would have to say my favorite is still up in the air. But it’s definitely between Italian and Mexican!

  15. Girl you speak the truth! This is why we don’t get Mexican out any more because it’s too greasy and heavy. Plus I have no idea where they have hidden the lard!
