Pasta, Peas, Presents, Pesto?

I love Birthday-Eves :) There’s almost always something in the mail, and it just makes me excited!

All my food was good today, but nothing compared to dinner so I’m going to swing right through lunch.

I had the last of the quinoa/brown rice and refried beans on another big taco-type salad with tomato, avocado, corn, romaine, radishes and scallions. It was a HUGE salad and filled me right up!

As for my snack, I brought some more cherries from home.

Those cherries got me through the day…seriously.

Today’s been a little rough around the edges.

But. Then I got home.

And saw a huge box!!! It’s my birthday present from my mom and dad, and I already know what it is (thanks to the writing on the box), but I’m not telling until tomorrow ;) I’m SO EXCITED!!!!! Seriously.

After getting over my present shock, Nick and I took Maggie to the park for a while and then headed home to get started on dinner.

The meal itself turned out great, but we didn’t end up eating until around 8:30 because we needed more peas, which meant they had to be picked and shucked.

Garden fresh peas are worth all the effort, though.

And today was one of those days when I needed some time in the garden. I trudged up our hill, colander in hand, ready to pick what we needed for tonight’s meal. Crouching down to the plants and grabbing fresh peas by the handful gives me time to think. Sometimes, this is the best part of my day.

I’ve had this idea in my head for a week or so and knew I needed to make this soon.

I wanted to make a dish that tasted like pesto but have the parts still be separate from each other – deconstructed, if you will.

This pasta tasted like summer!

I cooked some Trader Joe’s brown rice pasta and some of our peas, then mixed them with some olive oil, fresh basil, and toasted walnuts.

Garden to table in 30 minutes.

As my Nany would say, delish.

 

I’m finishing Top Chef and heading to bed so my birthday will be here quicker ;)

Nick’s making me a surprise birthday breakfast! I can’t wait to see what it is…

  2. So, I’ve lived in the southern U.S. all my life. I’ve been shelling peas. I had no idea I was shucking them as well. We shuck corn and oysters.

    At times, colloquialisms are mighty entertaining!

    I find your blog to be mighty enjoyable!

    • Ha, I guess you’re right! It would be shelling peas…I just call it shucking for some reason. :)

    • NO! You’re not wrong. I looked it up. It seems to be a regional/colloquial thing. Like the northeastern U.S. stands “on line,” but in the southern U.S., we stand “in line.” :)

  3. I am so into peas right now too! I had an amazing salad the other day with green peas, snap peas, and fava beans with hazelnuts, feta, and meyer lemons. Happy early birthday!! I hope it’s a wonderful day for you! :)
