My lunch held me over until dinner! I almost always need some sort of afternoon snack, but I didn’t even think about food until work was over and I was getting started on dinner.
Go pizza, veggies and hummus!
As for dinner, I had a Mexican-flavored rainbow in a bowl.
So many colors in this dinner – and it was delicious! Layers of flavor, tons of colors and textures…the perfect salad bowl.
Let’s see if I can remember everything.
- fat free refried beans
- brown rice/quinoa/salsa mixture
- red onion
I told Nick during dinner that all Mexican restaurants should offer fresh diced avocado, red onion, cilantro, and radishes with every meal – for free! They’re my favorite toppings for every dish we make at home.
If you haven’t tried radishes on a Mexican meal, do it! And have them with avocado. They’re awesome together – creamy and smooth from the avocado, crisp and crunchy from the radish.
I’ve got a few loads of laundry to fold, some popcorn to eat, and a puppy to play with.
Not bad for a Monday. :)
