Lightening Fast

Why is it that weekends fly by?

Nick and I had so much fun meeting our little nephew – it was hard leaving after just a few hours! We got to spend some time with him and the family, just hanging out around the house, watching a movie, and all taking a nap :) It was a great way to start our Saturday.

We left their house around 2:30 on Saturday to drive back home, so we ended up not getting home until around 11:30 pm Saturday night. But it was totally worth all the driving!

The craziest thing that happened this weekend? On our way home that night, there was a big storm coming through so it was raining, thundering, and the sky was filled with heat lightening.

Nick and I pulled off on an exit to take our bag out of the back of the truck, and right when we got to the stop sign at the end of the exit ramp, the sign got struck by lightening! It was nuts! I’ve never actually seen anything get hit by lightening – but we could see the burned spot at the bottom of the sign. Crazy, right?

After that, our drive was normal – thank goodness!

And yesterday was all about getting ready for the week ahead.

Since Maggie didn’t have much time to play outside this weekend, we took her out to Glen Alton farm yesterday afternoon and let her run and swim for about an hour while we walked around. The weather was perfect, and we had the place to ourselves! We need to remember to go on Sunday afternoons rather than Saturdays – there’s almost always other people there on Saturdays, and it was nice to be the only people there.

Once we got home, it was all about laundry, cutting the grass, picking and shucking peas from the garden, and eating dinner.

Not a bad way to end the weekend :)

I even remembered to prep my breakfast last night!

I mixed up some overnight oats last night with 1/2 cup oats, 1/2 cup almond milk, a pinch of salt, cinnamon, and 1/2 tsp or so of chia seeds. The mixture thickened up overnight, and this morning I added:

  • 1/4 cup Coconut Milk Kefir
  • 1.5 Tbsp walnuts
  • blueberries, strawberries
  • sprinkling of Not Sweet Vanilla Galaxy Granola

The bottom layer of this bowl was all berries. We got some fresh blueberries from Nick’s sister who went and picked them this week, and the strawberries are from a roadside stand we stopped at on the Eastern Shore before coming home.

The walnuts + granola were the perfect amount of crunch! And you just can’t beat fresh, ripe berries. Plus, this coconut milk kefir is awesome. I like it more and more every time I have it.

PS: I’ve decided I do not like the vanilla coconut milk creamer. I should have known when I bought it – I’m just not a fan of flavored creamers, period.

  2. When I was about 12 years old, the house across the street from us got struck by lightening and burnt down. It was SO scary!

  3. I Love Thunder and Lightning and Storms.
    Never saw anything get struck by lighting, if I did I probably would not love them so much.

    I had a great weekend, until my outlaws (inlaws) invited themselves on our 3 day trip to Baltimore for July 4th.
    UGH!

  4. Glad you made it home safe! I have actually witnessed lightening striking a big circus tent and it started on fire and burned the whole thing down. We got it on tape about 10 years ago, it was quite the scene.

  5. We don’t see a lot of lightning in California, but I did have a soccer game cancelled once because lightning struck the field. It’s terrifying! I can’t wait to hear more about your new nephew!

    My weekend was great–I moved down to Los Angeles! Enjoy your week!

  6. Oh wow. About 3 years ago, my boyfriend at the time’s best friend and one of the teachers from our high school were out on the soccer field and they were both struck by lightening. The boy was pretty much killed instantly but the teacher survived. It was awful because he was only 18 years old, the class president, about to graduate high school.. such a tragedy. I NEVER thought something like that could actually happen.. and now I take lightening and storms a lot more seriously.

  7. I almost got struck by lightening, well, I guess maybe I did? I was standing next to the car about to get in, holding an umbrella. As I getting ready to get in I felt what I can only describe as static electricity run from the umbrella through my hands and body. I immediately dropped the umbrella and my hair was standing on end, literally. Scariest thing evah’. I’ve had a healthy fear and respect from lightening ever since.

  10. I heard things get struck by lightning but have never seen it. It’s just a giant pop, right? That must have been really scary.

    Your overnight oats look so good! I’ve never thought to add a berry layer on the bottom. You have good ideas!

  11. That must have been crazy scary! I once saw a tree get struck by lightening. Split it right in half! My lord, that granola looks delicious! I love So Delicious coconut milk kefir. I really like the French Vanilla creamer, too, but I like ALL things vanilla.

  12. I love storms but have yet to actually see something get hit by lightening! I definitely enjoy storm watching though!

  14. That is crazy that the lightening hit the sign so close to you two! Glad you are ok! I have not tried overnight oats yet, but I really need to get on it. I keep forgetting to put it together. Although, from the looks of it, if I just did it…I wouldn’t forget anymore!

  16. I’ve not seen anything actually hit by lightning, but we have had some major lightning/thunder storms here in Billings, MT lately. In fact, yesterday we even had a tornado rip through part of town!! (I’ve *never* been so close to a tornado in my life.) I love thunderstorms, but not when they cause damage. :/

    I am totally gonna try those overnight oats! We’ve got frozen blueberries instead of fresh, but that’s ok… the hot oatmeal thaws them out. ;) Yummy!

  17. I’ve never seen anything hit by lightening before – how frightening! I did see a lot of lightening flashes in the sky last night though – we had a crazy storm in Western Iowa!

  18. the kefir must taste so good mixed in with the oats. ive only had the kefir with fruit so i will have to try it mixed in my oats next time!!

  20. I’ve never actually seen something get hit. But we had a huge storm a couple weeks ago and our building got hit. Lots of roof damage and everyone had issues with their Internet and cable after. Some of the ports on our brand new TV got fried.

  21. EEEP! Okay I saw this on Turtle Mountains FB page last month and have been dying to try this recipe. Hope it works okay with steel cut oats :)
