Coconut Kefir Cookie

Time for another breakfast cookie!

We have had some scorchers lately, and it’s making me want cold breakfasts instead of my normal hot bowl of oats.

Breakfast cookie = perfect breakfast…as long as I remember to mix it up the night before.

So, I did my usual trick and wrote myself a post-it last night so I wouldn’t forget. ;)

Plus…I wanted another new and fun way to use this Coconut Milk Kefir!

My breakfast cookie base was:

  • 1/2 cup oats
  • 1 Tbsp peanut butter
  • 2-3 spoonfuls applesauce (enough to get everything mixed together)
  • pinch of salt
  • cinnamon

This morning, I just poured on a little coconut milk kefir, added some fruit, and grabbed a spoon!

I loved the kefir on this, but I can’t wait to make more overnight oats with it again.

I’m a convert! And yes, this coconut milk kefir is a bit expensive, but for the same amount (in ounces) of greek yogurt, I would probably be paying the same price for what I get in this bottle of kefir.

  1. What exactly if kefir? I think I’ve seen it sold in coffee creamer type jugs but I’m not sure. Anyway, yummy breakfast cookie!

    • It’s basically runny yogurt – tart like yogurt and has all the live and active cultures, but definitely a different texture than greek yogurt. It’s delicious, though! I think it would be awesome with cereal instead of milk and in smoothies.

  2. I’m glad you posted this because I have been planning to buy coconut kefir for a recipe but really didn’t have a good idea of what I would do with it after that. This sounds like a great use.

  4. i love this idea!! i just made a kefir fruit salad but id love to try it on a breakfast cookie! kefir is so good.. i wish it was a little thicker.. but hey- cant argue with the probiotics!

  5. I’m so used to my hot oatmeal-I don’t know what I’ll do when it gets too warm for that! I’ll have to try one of these cookies or overnight oats…never have!

  6. I just bought coconut milk kefir and loved it in my overnight oats…definitely cant wait for more creations like yours! I am looking forward to more world cup games and probably a dinner out for fathers day!
