Do Overs

Lunch at home is often a HUGE salad.

I like being able to just throw in whatever I want from the fridge. I waste less because I can see exactly what I have, and my salads are awesome!

Today’s bowl:

  • 1 head romaine
  • 1 cup broccoli
  • 1 tomato
  • 1/2 avocado
  • 1 scallion
  • 1 tsp olive oil
  • 2 Tbsp hummus
  • salt, pepper

Hummus is great as a salad dressing! I mixed everything up together before eating, and the hummus coats every piece of letter, making the salad seem super creamy without any actual dressing.

 

Do Over

If you had the chance, would you go back and do anything different in your life?

I know I’m only 26, but I wish I knew back then what I know now, you know? I would have picked a different major or a completely different direction for my education. I just feel like my interests and passions have changed so much since my actual college days.

If I could go back to when I started college, I would have either:

  • Passed on regular school and gone to cooking school.
  • Done more in my school days with my English degree so I could actually have some real world experience and be able to get a job in editing or writing.

What about you?

Are your interests / passions different now than just 5 years ago? Mine have definitely changed.

  1. This is probably a good thing, but I can’t think of 1 thing I would do over. Sure, there have been rough spots. But if I didn’t experience everything I have I wouldn’t be who I am today

    Except that I would add in starting as an anthropology major.

  3. It’s not to late to go back! I am right now in fact. I graduated from college, couldn’t find and job and didn’t really love the field so I am go back in something that I am truly passionate about!

    • You’re right! It’s definitely not too late – it’s just figuring everything out with keeping jobs, insurance, etc.

  4. I have the same changes as you lady. I am 24 but feel I should have done more with my writing, lit, and publishing major OR gone to culinary school…

  5. It would have been nice to been in a sorority my freshman year, and gotten into the architecture program earlier. I would be a different person though and I wouldn’t have the cooking skills or healthy lifestyle that I have now. Maybe everything happens for a reason?

  6. I love Hummus mixed with a bit of rice vinegar to coat everything. It goes on almost every salad.

    If I knew then what I know now I would have taken more Bible classes in college. I went to a christian college and had the opportunity to take more but opted for more psychology instead. Now as a pastor that indepth study would be a big help. Instead I’m going back to school while working full time to get the same knowledge.

  7. I am in the process of going back to school to change careers because I did not make the right choice the first time around. With that being said, I don’t know that I would go back and change anything. I try not to focus on what I should have done and, instead, I like to focus on what I am going to do. It took me a few years to get to this place in my head, but overall, it leads to a happier outlook for me:)

  8. I’ve only been out of undergrad for 3 years and I already wish I could go back and change things! I think I would still have been an English major, but I would have focused more on journalism and communications than on literature.

  9. I know this may sound cliche but I live by the “regret nothing” motto. I’ve taken wrong turns and what not but no matter what I’ve learned something from it. You went down the path you did because that’s what yuo wanted at the time and you’ll have plenty more chances to do it again down the road. You’ll end up where you’re meant to be, don’t worry :)

  10. i think i would love to do over and have gotten my drivers license earlier. i still have to take my road test.. wish i didnt have to and it was all done but hey thats life with a capital L huh! lol

    mmm salads are perfect for lunch. when im at home, its a lunch or a stir-fry every time.. unless im being adventurous lol

  11. my dearest brandi, if you had gone to cooking school instead of college you wouldn’t have nick as a husband now would you? everything happens for a reason and i am so blessed to have been your roommate for one short semester that changed my life for the better. cherish every moment of your past, it is what made you into the incredible woman you are now! love you!!

  12. My do-overs are exactly the same as yours. I’m also kicking myself for getting a master’s in publishing and then realizing I wanted to go to culinary school. Now I can’t afford it… time-wise or money-wise.

    • Yeah, I would love to be doing either of those, but don’t have the time or money to go back right now, either.
