Leftover Pancakes, Perfect Breakfast

Why is breakfast always so good? What is it about the first meal of the day that always feels so satisfying?

I love waking up in the morning, knowing that I have an awesome meal to look forward to.

Today, I wanted something fun. I also wanted something to help clear out the fridge a little.

The solution?

Almond Butter and Banana Oatmeal Pancakes

  • 2 oatmeal sourdough pancakes (leftover from this weekend)
  • 1 Tbsp TJ’s almond butter
  • 1/2 banana, sliced

Love, love, love this combo!!!

I’m becoming a big fan of nut butter on pancakes instead of maple syrup. I still love maple syrup! But nut butter gets so warm and melty inbetween the hot pancakes and covers every single bite. :)

The pancakes were a little sweet and a little sour, the banana was sugary sweet and that almond butter was perfectly crunchy + salty. Everything just worked so well – I’m sad these were the last 2 pancakes in this batch.

 

I’ve got another busy day ahead. My direct supervisor is on vacation this week, so I’ve had some extra work to do while she’s gone. I’m ready for her to be back and I hope today is a bit calmer than yesterday!

  1. This is my absolute favorite way to use almond butter – I LOVE it on banana pancakes!! And just plain on a banana is a close second…..

  2. I love peanut butter on top of things like microwave cookies. Something more than bread but also hot so it all melts! Those pancakes look yummy! The combo of flavors sounds awesome. Sweet/sour, sugary…mmmmm

  8. They look great! I need to make more than enough pancakes next time we eat them so I can stick the leftovers in the fridge for later use. I love melting nut butter and dipping apples or carrots in it!

  11. Hehe, I did pancakes with peanut butter sauce this morning! I like to mix nut butter in with some almond milk and ovaltine to make a non-syrup for pancakes – my peanut butter has flax seeds in it too, so there’s that extra crunch…amazingness!

    I have been eating Trader Joe’s Sunflower Seed Butter lately and it is great with a piece of dark chocolate!

  15. I can’t decide what my favorite way to use nut butter. I just had a sunflower seed butter & jelly sandwich, but I always have to have it in my oatmeal.

  16. pb is good on pretty much anything but my fave is with jelly on a toasted waffle.
