Full Steam Ahead

I have so much to do this afternoon! Tons of laundry, cleaning house, possibly baking Nick’s birthday cake? That may wait until tomorrow after work.

Dinner was great last night!

The restaurant is right on the river and is a beautiful building.

They had outside seating available, so we got to sit on the huge back porch right along the river.

We split a beer sampler of all their brews  – great idea! Based on my normal preferences, I would have missed out on my favorite – their Cream Lager won me over.

For my meal, I ordered their Roasted Vegetable Pasta and got it with their marinara instead of the pesto.

It was great! The marinara was just a bit spicy and I loved the soft roasted tomatoes.  This serving was huge, though. I ended up bringing more than half of it home.

We also tried their onion rings…and I’m just now realizing that they may not have been vegan because of the batter, right? Doh!

But can I just tell you?

These were the most amazing onion rings we’ve ever had. Nick and I could not stop raving over them.

Why were they so good?

First, they use red onions Best. idea. ever.

And they served them with a maple-ketchup that I need to recreate at home.

Yum.

We were both too full for dessert, but that’s okay. We came home, cuddled with Maggie, and fell asleep on the couch.

And go us – we ran again this morning!

My legs were so tight, though. I kind of felt like I had someone else’s legs attached to my body….so strange! They were super heavy and just did not want to move. We did about 2.5 miles anyways, and I’m glad we went because it’s about to start storming here.

After running and showering, I made breakfast.

I could not decide what I wanted this morning.

Smoothie. Oatmeal. Smoothie. Oatmeal.

I ended up not having either :)

Grilled Almond Butter + Jam Sandwich!

I layered some of the TJ’s roasted flaxseed almond butter and Crofter’s Jam in between some whole wheat bread, and grilled it in a pan with a little grapeseed oil until it was crispy and the inside was warm and melty.

I hadn’t had a nut butter + jam sandwich in so long! And this is one of my favorite ways to have it. If you haven’t tried it grilled, do it!

Nick and I also had peaches this morning that I got at our co-op this week.

 

Lunch was easy – I heated up the last of the mexi-grains from this week and sliced up some avocado and a tomato.

I just heard the dryer timer go off – better get to that laundry!

  2. What a gorgeous restaurant. And the pasta looks perfect, as do the onion rings. Using red onions sounds like the PERFECT idea, especially with a mapley dipping sauce :)
    And I swear grilling any kind of sandwich makes them 10x better. Hope you’re able to relax a bit later!!
