Soy Three Ways

Burn Notice starts up again tonight! Do you watch? We love it – that and White Collar are two of our new favorite shows.

Thank goodness USA’s seasons are at different times than regular tv – it gives us something to watch!

My lunch was really good, but I was hungry again just 2 hours later so I made myself an awesome snack plate.

Celery, broccoli, tomato, hummus + one of my homemade pitas! Dipped and crunched while I worked.

If you like pitas, make some at home! They were so easy and are 10 times better than any I’ve ever bought in a grocery store.

After Nick cooked up some chicken and rice for Maggie, I got started on dinner.

We had soy three different ways!

Soy = tofu.

Soy = soy sauce in the pasta and tofu marinade.

Soy = edamame on the side.

It was awesome :)

I mixed up a marinade for the tofu (and some free range chicken for Nick) with soy sauce, garlic, ginger, crushed red pepper, lime zest, salt, and pepper.

While the tofu and chicken baked in the oven (at 400), I got working on the pasta.

I cooked some whole wheat pasta on the stove and got the veggies going in my wok: carrots, garlic, scallion, red onion, red pepper, orange pepper, and celery.

Once the veggies were cooked (but still crisp), I added in the cooked pasta and the sauce:

  • 1/4 – 1/2 cup soy sauce
  • 2 Tbsp peanut butter
  • lime zest and juice
  • garlic
  • ginger
  • 1/2 tsp sesame oil
  • cilantro

Once the sauce had coated all the pasta and veggies, dinner was served!

I loved how the pasta turned out. The veggies were still crisp, and that peanut sauce was thick and rich and coated every piece of pasta. Yum.

I’ve got 30 minutes until Burn Notice comes on…and there may be a bowl of pb puffins as a snack tonight ;)

 

*I also already can’t decide what I want for breakfast tomorrow. Is that ridiculous? I just need to figure it out soon because one option needs to be prepped tonight.

    And I know what you mean about breakfast.. I like to plan it too! I already know what I’m having and I can’t wait! Is that sad?

  7. I don’t watch Burn Notice but I love White Collar! And Royal Pains started last night too, that show is pretty cute. I DVRed it but couldn’t stay up that late to watch it.

    Burn Notice is a GREAT show! Haven’t caught White Collar- but we also LOVE love love Royal Pains & …ummm….the show about undercover cops….with the sexy eye candy men….i know, very helpful description. I am sure I will think of the name of it eventually!!
