Vegan Challenge

If you haven’t heard, Emily and Allison are going vegan for the month of June.

While I’m not even vegetarian, I think it sounds like an awesome challenge and it’s a good way to really think about what you’re eating, period.

I’m seriously thinking about doing it, but since it starts today, it may be kind of “iffy” this week since I didn’t get to plan very well.

But breakfast is vegan – a good start :)

These berries from the farmer’s market are the best we’ve had, but they’re going so fast! I knew I had to have a few this morning before they’re all gone.

  • 1/2 cup oats
  • 1 cup water
  • pinch salt
  • cinnamon
  • 1/2 banana, sliced
  • strawberries
  • Just 4 Nuts Butter (almost time for "OIAJ”!)

The only thing I’ll miss this morning is my coffee. I usually put a little skim (or half’n’half) in my coffee and I don’t have any vegan creamer options. It’ll be hot tea today!

 

Can you believe it’s June?!? This year is flying by, but June will be awesome. Nick and I will be an aunt + uncle this month for the first time, plus both of our birthdays are in June!

 

What are your favorite vegan meals/snacks? I’ll take all the ideas and recipes I can get!

  3. ahhhhh i can’t believe its june! i have NO recollection of where march, april OR may went.

    good luck on the vegan challenge if you decide to do it! summer is probs a good time since produce is in such fresh abundance…including those strawbs! farmer’s market strawbs are the BEST!

    My favorite vegan snack is baked goods. i’ve got tons of recipes for them!

  5. Vegan-June sounds great!! I’d love to participate in one-vegan-meal-a-day but a whole month?! Not for me!!
    But if you’re really committed you can do this!! I’m sure of it!!
    Mhhh…. Banana and strawberry!! One of my favorite combos!! :D

  6. I’m unintentionally vegan 70% of the time, just because I don’t like to eat more than one serving of meat a day and my lactose intolerance keeps me away from the most common animal byproducts! My favorite “accidental vegan” meals are:

    -pasta with boiled tofu, olives, broccoli, and vinaigrette dressing
    -Green Monsters with banana, frozen berries, spinach and soy milk (I’d add protein powder if I wasn’t a poor grad student)
    -“TLT”: tofu baked with a coating of mustard, on a hearty bread with lettuce and tomato, with oven fries on the side
    -bean burgers!

    This list is probably pathetic compared to entire blogs by devoted vegans. When all else fails, I turn to Mama Pea :D

  7. Part of the reason I love your recipes is that they can be made vegan so easily! Like your grain salads . . . or pilafs . . . or refried bean/avocado/egg (minus the egg) creations :-) I’d definitely recommend stocking up on soymilk and tofu, because scrambled tofu makes an awesome substitute for eggs (see this recipe: http://blog.fatfreevegan.com/2007/09/vegan-omelette-for-one.html) and soymilk is great in coffee/oatmeal/smoothies!

  8. Since I don’t eat dairy, a lot of my snack are vegan. I really enjoy cut veggies with bean dips, baked sweet potato slices with nut butter and if I want something lighter, just fruit.

  11. I don’t think that I could ever be vegan, but my favorite snack would be a microwaved apple with cinnamon on top. If you can find vegan graham crackers to crush on top, that super yummy too.

  12. Using ground nuts in recipes has been my savior for cutting out cheese!! It’s so good in eggplant parm & on pizza!

  13. I would love to try being vegan but it’s just not realistic for me. I need my eggs and fish for protein! Not to mention Greek yogurt. Other than that I could do it no problem.

  14. I have faith you could do it lady! The only hard transition for me since I was already a vegetarian was greek yogurt…because the alternatives don’t have the same texture and protein to keep you as full. Meal wise though, I love split pea soup, sweet potato fries, huge salad beasts with tons of seeds, avocado, etc., the usual suspects for bfasts (oats, pancakes, waffles, smoothies)…bbq tempeh…and much more!

  15. I think the Vegan challenge is a good idea!! But I’m not sure I could do it for a whole month.. I’d miss my dairy too much!

  16. I think taking time to assess your eating habits is always a good thing and this sounds fun! My favourite vegan eats include hummus with carrots to dip…perfect in my opinion. Guacamole is another good one!

    I also just made an edamame and chick pea salad that most certainly counts as vegan – check it out! Just don’t serve it with a poached egg, like I did!

  17. Well I’m not vegan but I’ve heard of some really good vegan overnight oat recipes. And homemade or storebough black bean burgers..or anytype of veggie burger for that matter. Of course there’s always salad! :P

  18. Ok, I’m on board for the Vegan Challenge! I just so happened to be vegan this morning. I had a Green Monster made with brown rice protein powder, baby spinach, almond milk, frozen cherries and a banana. My coffee was made with almond milk. For lunch is a Hugh Ass Salad with balsamic vinegar. I did bring a Chobani yogurt for a snack, but I’m sure I can skip it and have some hummus n pita chips when I get home.

    Funny this challenge should start today because I went out with a BANG with a giant cheeseburger, ribs, and cheesecake yesterday! It was my biggest “cheat” day in months!

  19. I love my chicken and cheese too much to be vegan, but I do appreciate a good recipe when I find one!

    I made these over the weekend: http://peasandthankyou.com/2010/02/12/fun-dip/ (Vegan Mango Cupcakes with Coconut Chocolate Ganache) and they were amazing. The mango and coconut milk went great with the ganache.

    Check out Peas and Thank You’s recipe section. She has hundreds of fun (and all vegan) recipes. I want to try her recipe for Grand Vegan Biscuits. Since you’re on a biscuit kick, you should try it out for me first. ;)

  20. Everything on my blog is vegan. If you want any recipes I’d be happy to share! Most of the time I snack on fruit (dried or fresh), nuts, smoothies, or cereal.

  22. you should try the so delicious coconut milk creamers! they are yummy. favorite vegan eat is for sure HUMMUS! oh.. and guac. :) xo

  23. i’m always surprised at how much i eat is vegan, bc i try to avoid cheese/dairy and my husband’s a vegetarian. to make salads more exciting, i add marinated mushrooms, roasted veggies, dried fruits, and candied nuts
