Sounds like you all love rhubarb as much as I do. I definitely want to get some more – there are a few other recipes I want to try with it, but I’m not sure if anything can top the strawberry-rhubarb crisp. We polished that off in 2 days!
Today was a pretty good day – busy at work and I got in a short walk during my lunch break!
Nick had some stuff to do in the lab today so he couldn’t eat lunch with me. I decided to take advantage of the fact that it wasn’t raining and took a walk to a little cafe nearby for some iced tea and then walked back to the office after talking to my mom on my cell phone.
It was the perfect thing – it got me out of the office for some fresh air AND a little extra activity in my day.
Since Maggie is all better from her surgery, we also took her out to the park once we got home today.
She was so happy!!!
She ran around with us for about 45 minutes after work and was just excited to be outside.
It was a nice way to finish out the day.
Then, things got even better because we had leftovers for dinner!
Leftovers = Easy. Less dishes. Simple cleanup.
I made a Pork Posole soup in the crockpot yesterday and we had more of the soup with some cornbread I made tonight.
The soup is one of the easiest recipes ever:
- Lean cut of pork
- 1 jar green salsa/salsa verde
- 1-2 cans hominy (I used one can of white and one yellow)
The soup was even better with some cornbread crumbled in it :)
Off to finish watching Idol + The Biggest Loser finale.
