Day #3 of my favorite ways to use yogurt!

Who doesn’t love a short stack?

I made a batch of oatmeal pancakes to use up some egg whites and layered them with cocoa-yogurt and fruit.

For the yogurt layer, I just mixed some Oikos with cocoa powder – easy, and a bit more decadent for a Friday morning breakfast.

The oatmeal pancakes were the normal mix (1/2 cup oats and egg whites, cinnamon, salt, 1 tsp baking powder), cooked over medium heat until set.

Pancake. Yogurt. Berries. Pancake. Yogurt. Berries.

These (plus a few cups of coffee) will definitely keep me going today.

 

I’ve got a long day ahead of me!

  • Working until 10 am
  • Getting my bangs trimmed
  • Getting on the road!

I’m driving the 5.5 hour drive all by myself today to have a “girls weekend” with my mom and older sister.

I’ve got a lunch + snacks packed in the car, tons of cds, and a full tank of gas!

This weekend is going to be so. much. fun. I can’t wait!!!

    • Yup – the recipe is in the post. I just mix all that together and then pour it in the pan!

  8. That is one of my favorite pancake toppings–yummy! About how many eggs = 1/2 cup egg whites? I hope you have a fabulous girls weekend! I love listening to books on tape while I’m driving. I listened to the whole David Sedaris book “When You are Engulfed in Flames” on my cross-country trip and it was awesome! Glee soundtracks also make amazing driving music. Good luck and have fun! :)

  9. Have a great weekend!! I’m working on a new playlist for my road trip to MD today- last time I was driving by myself I discovered what horrible, horrible music I have on my Ipod.
    I like anything upbeat for driving to keep you from getting bored or tired ;)

  12. Road trip music to me is always classic rock because that is always what my dad listened to.

  13. I just put an Aerosmith song on a mix CD. “Walk this way.” It was ridiculous and really pumped me up actually. I haven’t listened to them in years.

    Another song that makes me want to hit the road is A.C. Newman’s “Like a Hitman, Like a Dancer.” I don’t know what it is about that song, but I’ve never slapped a steering wheel so much.

    I have tons of other suggestions. I should share some of the playlists I craft with you sometime!

  15. Aw, I want a girls weekend! Thinking about the great times that you are going to have should get you through your long work day. That breakfast oughta help too, looks great!

  17. i love listening to 80’s girl groups on the road. the go-go’s and bangles come to mind.
