Overnight Oats

Day#2 of yogurt!

One of my favorite breakfasts is overnight oats – I just have to remember to make them the night before ;)

Thankfully, I wrote myself a note last night so I wouldn’t forget!

Last night, I mixed up the base:

  • 1/2 cup oats
  • 1/2 cup milk
  • cinnamon
  • vanilla
  • pinch of salt
  • chia seeds

I left the base in the fridge overnight and added the finishing touches this morning:

  • 1/2 cup Oikos
  • 1 cup strawberries
  • almond butter

I will say – most days, I would rather have hot oatmeal. But I love having overnight oats in the spring and summer. A big bowl (or glass!) of cold and refreshing oats, fruit, and yogurt is a great way get going in the morning.

Speaking of…Nick and I went running this morning! We finally had a break in the rain and we were able to get out for about 3 miles before breakfast and work. Yay us!

  3. Your overnight oats parfait looks beautiful! I love using strawberries and banana. I haven’t tried adding chia seeds yet but I’ve heard it makes them even better.

  6. Overnight oats are my favorite! Yours look so beautiful with the strawberry layers. I love adding strawberries, banana, and almonds in the morning.

  7. We are seriously breakfast twins – I had OO this morning too! ;)

    I love putting frozen fruit on top of mine at night – then in the morning they’ve melted and created an awesome “sauce” to swirl into the oats. YUM!

    I agree that fresh berries are the way to go with overnight oats and want to try the banana soft serve with it.

  11. overnight oats make my life exponentially easier – especially when I was at college! I love mixing in some mooshed bananas. It adds such great sweetness!

  12. What a beautiful breakfast – love the parfait look and that layer of almond butter :) I love using chia seeds in overnight oats, but I am definitely still a rookie when it comes to them! I think when it gets hotter I will appreciate them muuchhhh more, though :P

  14. I have never put greek yogurt in my overnight oats, but it seems like a lot of bloggers do. I guess this is something I should try.

  16. Soooo I made overnight oats the other day and they just didn’t come out well at ALL! :( I need to work on my skill and mix ins so I’ll check other comments to see what I can do to help! lol

    • I didn’t like them the first time I made them either! I had to find the right ratios to get the texture how I like it.

  18. Looks like the perfect summer breakfast! Too bad it never gets warm enough for “summer” here in San Francisco! :) I love topping my overnight oats with fruit (banana, apple, or strawberries) simmered in a bit of almond milk with lots of cinnamon. It makes the perfect combination of warm and cool and lots of fun textures. Enjoy that breakfast!

  20. I had overnight oats this morning! My bowl contained: 1/3 cup oats, 3oz nonfat plain Greek yogurt, 3oz unsweetened chocolate almond milk, 1/2 banana, truvia, and 1/2 tbsp almond butter. yum!

  21. I have just discovered adding cocoa powder to my oats! Thanks for all the great ideas on how to expand my oatmeal repetoire!     • yes! You could definitely make this with soy/almond/hemp/rice/coconut milk and use soy yogurt or coconut milk yogurt instead!
