I dreamed up these pancakes last night, and (thankfully) they’re as good as I thought they would be!
I made another batch of oatmeal pancakes this morning, but added in a few new ingredients to make them Cinnamon Mocha Pancakes.
- 1/2 cup oatmeal
- 1/2 cup egg whites
- cinnamon
- 1/2 tsp cocoa powder
- 1/2 tsp instant coffee powder
- pinch salt
I completely forgot to add the baking powder this morning, so they weren’t as “puffy” as normal, but the flavors were great together.
I topped the pancakes with some ricotta and a sprinkle of cinnamon.
Check out how red those strawberries are! Each one is perfect. I bought a pound of local berries at lunch yesterday and they were worth the $4.50. The ones in the grocery store may only be $1.50, but they’re not perfectly ripe OR red. I’d rather spend a bit more and have berries that actually taste like strawberries.
I’m also having coffee in my winter mug – kind of hoping it will cool me down a bit in the house :) The AC people are coming to fix it today!

Ahhh, I love dreaming of a breakfast and having it come true :-)
For me, the prime pancake topping is New Hampshire maple syrup from my grandparents town. Yum!
I love pancakes with a little peanut butter and syrup on top…
Not a huge fan of fillings, but I’d like to try the pumpkin pancakes I sometimes see on the blogs!
Strawberries and whipped cream! It reminds me of my childhood. :)
I like bananas and chocolate chips. Sometimes I’ll add toasted walnuts too. And I never say no to butter, syrup, and whipped cream!
I like using shots of coffee in unsuspecting things–and pancakes are perfect for breakfast as is coffee! Brilliant =)

Rhubarb compote! I tried it for the first time last week and I have not been able to eat a breakfast without it since.
I always forget about ricotta, but it’s such a good breakfast cheese! Those cakes sound great:)

I tend to prefer savory breakfast foods, but I had NY Cheesecake Strawberry Pancakes at I-HOP the other day and they were pretty socks rocking.
Also, I LOVED your last post! That’s how I feel about my husband too and I honestly got a little teary eyed!
As of yesterday my favorite pancake topping is almond butter! But is there anything almond butter ISN’T good on?!
$1.50 for strawberries!? Even the bad ones in the grocery store here are $5! Jealous! My favorite pancake filling has to be bananas…yummm!
Ooh what a good idea to top pancakes with ricotta! Gosh, we can never get strawberries for $1.50 here either… But you’re right anyway, I’d rather pay more for some beautiful and delicious berries :)
I love almond butter and bananas. It’s the yummy combo and they are super filling.
And I totally agree with you on the berries. I only buy them at the farmers market where the vendors stand behind their products.
Banana! No doubt about it. With maple syrup and butter on top. Heaven on a plate!
I love pumpkin pancakes and schmere them with spicy peanut butter and sf syrup – I think I’ll make those tomorrow!
I need to buy some instant coffee if only to use it to make pancakes. Great idea!
I have seen so many instant coffee recipes in the last few months but I always forget to pick up some. These sound delicious. I had no cinnamon in my oats today (bf didnt have them) and it completely made a difference (in a bad way). Hope you are having a great thurs!
I was dreaming of them too today. In particular, the ones I had a few weeks ago at my favorite breakfast restaurant, Cinnamon Oatmeal Pancakes with Fresh Strawberries and Cream. I think I will try to recreate them this weekend. :)
Those sound delicious! I like top mine with greek yogurt, banana, strawberries, and almond butter/peanut butter!
