Toasty

It’s supposed to be over 80 degrees again today! Where is Spring? This feels much more like summer.

I knew I would not want a hot bowl of oatmeal this morning if the house was still warm when we woke up – and I was right!

Last night, I made sure to mix up a breakfast cookie to have for breakfast.

Last night, I mixed:

Then I spread it on a plate and let it sit in the fridge overnight.

This morning, I topped it with some ricotta + strawberries.

Perfectly cold breakfast to start another warm day around here. Hopefully it won’t be as muggy?

  3. the humidity is outta control here too! my hair is goin’ cuuurrraazzzyyyyy haha. my fave cold breakfast would probably be a bowl of cold cereal w/ vanilla almond milk topped w/ fresh strawberries :)

  4. I don’t do a lot of cold breakfasts anymore since going gluten free. I want to start making my own cold cereals because most of the gluten free ones are crap. Lately, I have been eating millet toast and eggs. Exciting, I know.

  5. I’d probably have to say a protein smoothie or shake of some sort. I love cereal but it never keeps me full.

  9. Cold breakfast… wow. It’s been awhile since I’ve had that! But I do sometimes indulge in a BIG bowl of Kashi cereal… honey almond flax has stolen my heart! :)

  10. I am hoping we won’t have spring like weather come summertime then!! That wouldn’t be fun. It hasn’t been muggy at all here, but regardless of the weather, my favorite cold breakfast is just plain ol’ cereal and milk!

  15. I seriously have not tried the bfast cookie but think I will try and get on that for tonight using my new gluten free rolled oats…this looks beautiful. I agree about the warm days resembling summer…I am actually more of a mild weather girl so I don’t love it…

    My favorite cold breakfast so far is Oh She Glows vegan overnight oats in a a banana split!

  16. That looks good!!! I’ve been wanting to try a breakfast cookie but I was unsure of if it would keep me full. Did yours?

    • Yeah, they really do a good job of keeping me satisfied until lunch. That plus some coffee or tea is pretty filling.

  18. We’ve definitely been getting an interesting mix of weather here but I cannot complain. It is supposed to reach 77 today and I am thrilled.

  19. Jealous of your strawberries – I bought some over the weekend, and for whatever reason, I put them in my pantry!! When I went searching for them today, they were all moldy :(

  20. Oats haven’t been appealing to me in this warm weather, either. I’ll definitely have to give the breakfast cookie a shot – is applesauce necessary?

    • Probably not, but you would need something else in it’s place, just to make the mixture stick together. Some people use mashed bananas or milk of some kind, too.

  21. it might be time for me to try a breakfast cookie again! i love smoothies and cereal when it’s hot out.
