Pecans Make the Meal

Goodness, it’s definitely Monday, right?

There’s nothing like starting the week off with a full inbox, a few emergencies, and a huge appetite that’s begging for lunch at 10:30.

Thankfully, I stayed busy enough to break for lunch at my normal time and it was totally worth it!

This is pretty much what we had for dinner last night, but after getting home, buying groceries, unpacking our bags, and actually eating…it was 9 pm and I  was not about to turn my computer on ;)

Thankfully, I cut enough veggies last night to leave enough for my lunch today.

I had a HUGE salad:

  • Local mixed greens
  • carrots (who AM I?)
  • radishes
  • scallions
  • hard boiled egg
  • chicken
  • dressing made of olive oil, raspberry vinegar, s&p, and dijon

The salad was almost as good as the one we had last night, but that one included some of that amazing Amish Market Bacon. Yum.

But the star of my lunch was my yogurty-dessert!

I am rolling in the yogurt right now – I’m not sure how it happened, but I think it involves a few good finds with Nick’s mom this weekend. Let’s just say we have a huge container of Chobani, a huge container of Fage, and tons of Oikos, as well. I’ll be eating a lot of yogurt in the next 2 weeks, but I’m excited for it! It’s so hard to find them on sale, so I just figured I should stock up while I could.

My bowl today had one ingredient that I keep forgetting I have.

Have you ever used pecan meal? It’s just ground pecans, but I had the genius idea to add it to my yogurt today.

The entire bowl was:

  • Plain Oikos
  • Strawberries
  • 1 tsp ground flax
  • 1 tsp pecan meal
  • Saigon Cinnamon (the best)IMG_9194

And I just have to share my excitement for these strawberries.

Since we were out of town this weekend, I didn’t get the chance to go to the farmer’s market and buy my local loot.

But, we still needed groceries for the week, so I went to Food Lion last night and found these berries from North Carolina!!! Most of the berries I can get in stores here are always from California or Florida, so I was psyched to find somewhat-local berries :) And they’re awesome – you can see how red they are.

I’m hoping all these fruits, veggies, and good bacteria will help kick this head cold to the curb!

 

Since I have SO much yogurt taking over my fridge, what’s your favorite way to use / eat yogurt? Recipes, mix-in ideas? All suggestions welcome!

  2. emergencies on a monday morning.. i hear ya!

    yes good bacteria/probiotics and fruits and veg should help with the head cold. i started taking quercetin for my allergies and lowered immunity.. and so far so great. gosh i hate head colds tho! yuk!

    ive never seen pecan meal! just almond meal… pecans are more delicious than almonds imo. oh walnut meal would be good too.

  4. I add a tiny bit of honey and some granola and strawberries. that’s my favorite way to eat it. But I eat it a ton of other ways.

  6. I always add some fruit for sweetness (berries, banana, chopped apple, grapes, chopped pear, etc.) and then something for crunch (granola, cereal, nuts, today it was little honey graham cookies!). I also love using plain Greek yogurt as a sub for sour cream in recipes.

    Hmm yogurt is great for SO many things-I love mixing it with granola!

  8. I love putting sf syrup in my greek yogurt and using it for a dip for apples!

  9. I have to admit that I am NOT a huge yogurt person so I prefer mine in smoothies or disguised in some way. :-) I’m insanely jealous now that I saw the price tag on your pecan mea! OMG that is so affordable.

  10. I have started using nonfat Greek yogurt as a topping for my (gluten-free) pancakes! I mix it with a little Splenda, unsweetened cocoa powder, and a tiny pinch of Amazing Meal, and then spread it on top of pancakes. Delicious!!

  11. Yay for Carolina strawberries!!! We have the BEST here in UPstate SC.. not that I’m biased or anything ;) I seriously eat my weight in them while the season lasts.
    Oooo yogurt! Love it! We are over run with yogurt too.. I like it on top of oats, mixed into oats (yoatgurt), in smoothies/green monsters, as a replacement for oil in baking, in yogurt messes with cereal, fruit, and pb… Ok, I could go on and on and on but i’ll stop now.. :)

  14. ohhh i LOVE almond meal, but have never seen pecan meal. perhaps i could also make walnut meal? the possibilities are endless!

  15. I don’t have pecan meal, but I do have almond meal – good idea to mix it in yogurt! I go through phases with my yogurt, but on last big tub of plain Chobani, I discovered this new favorite concoction: a few drops of vanilla stevia and 1 tbsp cashew butter mixed into 4-5oz of yogurt, topped with half of a sliced banana. yummm… I seriously wish I had an ice cream maker now to turn it into fro yo. Love the tartness!

  16. I bought some organic North Carolina strawberries the other day and they were far and away better than any I’ve had from Florida or California this year so far. I can’t wait until the Tennessee strawberries are in! (Although our Farmer’s market is completely flooded here in Nashville so I hope Whole Foods picks them up because I’m not sure when it will reopen! It is crazy.)
