Cook, Eat, Sweat

Our air conditioner is having some issues today. And, of course, this has to happen on the muggiest, stickiest day we’ve had this Spring.

This was the temperature inside our house just a few minutes ago. Fun :) I had the windows open and fans on all afternoon, but it didn’t seem to help so much.

Thankfully, the air seems to be working a bit better now and the house is starting to cool down.

But cooking dinner was miserable!

I should have just made salads. I was SO hot in the kitchen with the oven on and stove going.

Good thing dinner was worth all the work ;)

I made some individual meatloaves (they take less time in the oven!), mashed potatoes, and broccoli with carrots and onions.

The meatloaves were a mix of Virginia bison, egg, oats, parsley, garlic, Italian seasoning, salt, pepper, ketchup, and dijon mustard.

I mixed it all together, formed the mix into 4 equal portions, topped them each with a little ketchup and dijon mustard, and baked them on a foil-lined sheet at 375 for about 25 minutes.

While the meatloaves worked in the oven, I boiled some potatoes and then mashed them with 2 Tbsp half and half, salt, and a little grapeseed oil.

I’ve got to cool down! Time to change into lighter clothes and sit under the fan for a while :)

  4. Last year, our air condition broke on the HOTTEST week of the year! It was awful, and $5000.00 later, we had ourselves a brand new unit and a cool house. Priceless! ;)

  5. Our AC broke last year so we have to replace this year. We just haven’t done so yet.

  7. While living in San Francisco our apartment had no air conditioning and no screens in the windows. So, when the apartment reached 91 degrees (I kid you not) we had to open the windows and let all the bugs come in. Not fun.

    I can’t believe you cooked meatloaf and mashed potatoes in 80 degrees. I think I would have changed the meatloaf to a burger and thrown it on the grill!

  8. Our AC was off at work yesterday and it was brutal! I wore a sleeveless dress and a cardigan so I couldn’t take the cardigan off… BOILING! Hope it’s all fixed now :-)
