Hummus Muffin

I could only think of one thing for breakfast today.

Seriously, Heather is a genius! Hummus with eggs is one of my new favorite things. It’s just so good! I would have never thought to put the two together, but they’re a match made in hummus heaven.

And if two things are perfect for each other, they should always be together, right?

I made the same breakfast I had last week:

Ezekiel English Muffin
Applegate Farms Canadian Bacon
2 over easy eggs
Hummus + Dijon + water “sauce”

I love the mix of the hummus and dijon mustard – put it on your “to try” list, if it’s not on it already.

I am just recently OBSESSED with hummus. I love it on pretty much anything (except veggies) but I really love it with warm naan or pita chips. It’s dangerous.

Hummus is just like peanut butter for me- I’ll try it on pretty much anything at least once!

My fav way to use it is just as an added extra in wraps!

I love egg sandwiches with english muffins and hummus, too! Making a “deviled egg” with hummus is good, too :) I usually have hummus instead of the yolk since I hate the yolk in hardboiled form – but I bet it’d be good mixed with the hummus if you don’t mind yolk, too.

I have yet to try the hummus & egg combo. I need to keep that one in mind!
