No Bake Oatmeal

No bakes.

Preacher cookies.

Whatever you call them, I love them.

We love the cookies so much that Nick had a plate of those as his “groom’s cake” at our wedding instead of an actual cake.

As soon as I saw Christie’s post on her no bake cookie oatmeal, I knew I needed to make it. Plus, she just sent me some homemade coconut butter and I couldn’t wait to try it in this bowl! Thanks, friend! :)

Now, my mom never put peanut butter in her no bakes. I know the most common no bakes were either pure cocoa (like hers), peanut butter, or coconut. The simple cocoa ones are still my favorite, but I love all of them.

But since I wanted to try my coconut butter, I went all out today – cocoa, coconut, AND peanut butter.

I was also trying out a new milk today! I finally found this Turtle Mountain Coconut Milk in the store this weekend and was excited to try it in my oatmeal.

  • 1/2 cup oatmeal
  • 1/2 cup water, 1/2 cup coconut milk
  • 1/2 Tbsp cocoa powder
  • pinch salt
  • 1/2 banana (for sweetness)
  • 1 Tbsp coconut butter
  • 1 Tbsp peanut butter

No wonder people are going crazy over coconut butter – it’s delicious! I love how it melts on top of the oatmeal. I can’t wait to see what else I can do with it.

I also really liked this coconut milk. I bought the unsweetened, but did see that they had an Original and Vanilla flavor. Does anyone know if they make a chocolate one? I bet that would be delicious.

  1. I have yet to try coconut milk (besides the kind that comes in a can that I’ve used for baking – which is delicious, too) but I love coconut oil and butter! I love the butter on oatmeal, toast, fruit, etc. I love the oil as a moisturizer, to saute fish or seafood, or to use in baking. I think they are both such versatile ingredients!

    I think they only make the unsweet, plain and vanilla. The sweetened varieties, while being sweetened with agave are still heavily sweetened with almost a tbsp worth in each serving so I have not tried them. I do love the unsweet, though.

  3. I lived on So Delicious Coconut Milk, Coconut Kefir and Coconut Ice Cream after I had my tonsils out since I couldn’t have dairy and I will tell you that I am in love with all these products! I don’t even do dairy anymore really bc of how much I like them. If you have a chance, def try the kefir and ice cream. Oh yea, and the coconut milk is AMAZING in a smoothie too ;)

    I’m also with Jess on the coconut oil, I use it for everything, even washing my face at night! I love the stuff.

  4. I looooove coconut milk But the non-diluted kind from a can. And I just opened Thai Kitchen brand and it’s not nearly as good as just the 365 store brand :-/

  5. I love Coconut milk but haven’t tried the So Delicious cartons yet. I add in a 1/4 cup of 365 canned light coconut milk when cooking steel cut or other oats on the stovetop. It is so yummy. I also love baking with the So Delicious coconut milk yogurt and Nuvitas coconut oil.

    how was the no-bake oatmeal without yogurt? yogurt gives it such a good thickness, i wonder how it would be with just water. happy tuesday dear brandi :)

    • I loved it! The mix of water + coconut milk gave it a really creamy texture. I think it would be delicious with yogurt, too.

      And yes, if we EVER get to move into Glen Alton, you’re invited :)

  8. I whipped up some coconut butter about a month ago and have been using it on my oatmeal. It’s pretty darn yummy! Your oats sound wonderful.

  12. Oh my gosh I LOVED no bakes growing up. I think the version I knew and loved were the peanut butter variety. I’m swooning right now just thinking about them :)

  13. Holy oatmeal! Way to go, Brandi! I’ve tried coconut oil, which LOOKS like coconut butter when it solidifies, but I want to try the butter too. I love using coconut milk in Thai curries.

  15. I have only cookied curries with coconut milk. I’ve never drank it plain. I’d imagine it would be great in oatmeal though.

    I made my own coconut butter. I thought it was pretty good. Not worth the crazy store price though!

    This oatmeal sounds really really good. I love those no bake cookies!

  16. YUM!!! I’ve been wanting to try coconut butter SO BADLY! But I have tried Coconut Kefir and it’s delicious!

    That bowl sounds amazing! I loved no bake cookies too but I always put PB in them. They are just plain awesome though, any way you go.

  17. Love that coconut milk! But it’s pretty pricy so I only buy it on occasion.

    And I STILL CAN NOT FIND the coconut butter. I’ve searched high and low but I am so determined!! :)

  18. I love So Delicious Coconut Milk! The vanilla is so good! I wish they would make a chocolate one. That would be heavenly. They did just come out with a shelf-stable quart size, though. So that’s pretty nice.

    I love coconut butter, but boy, is that expensive!

  19. Ooh, I’m so trying this! We use coconut milk instead of regular milk for my 21mo old (we actually don’t use regular milk at all – we buy org. rice milk usually to drink because it’s cheaper than coconut milk) but I also have Nutiva org. coconut oil. Haven’t tried coconut butter, but I’ve used the coconut oil in smoothies, and as oil for baking – it’s awesome with those all-natural crinkle cut fries and sea salt!! And rubbed on your skin, it feels amazing. :)

  22. I made a version of this with cashew butter twice last week – love it! I definitely want to try coconut butter though. I even bought coconut a while back to make it, and still haven’t gotten around to it.
