Why do the best tasting casseroles turn out so ugly?

I think I’m going to work on this recipe a bit. The bean mixture wasn’t quite as thick as I wanted, but the flavor was great!

Since I need to test it a few more times, I don’t have all the measurements, but I can give you ingredients!

  • pinto beans
  • refried beans
  • diced chicken
  • couple tablespoons cream cheese
  • cumin
  • red onion
  • cilantro
  • corn tortillas
  • salsa verde

The corn dish was great, though!

I sauteed some diced orange, yellow, and red peppers in some olive oil and added in some corn and scallions.

Maggie’s been super snuggly tonight so I’m gonna go cuddle her until bed time :)

 

Mystery ingredient from lunch yesterday is being revealed tomorrow!

  1. I love ugly food that tastes delicious!! It’s like a culinary surprise. Sometimes I’ll try to make my food look ugly and my roommate/friends just laugh at me. Though personally I think your casserole looks yummy. Some sort of enchiladas??

  4. Haha, it does look pretty nasty but I couldn’t agree with you more, the best tasting things are most often the worst looking. The stomach sees no ugly!! :)
