Grillin’ Greens

Ah, Friday night.

Is there anything better than the feeling of starting the weekend?

Nick and I had a fun lunch date today!

Nick went to this newer place in town, Greens, with a friend last week and wanted to take me today.

It was really good! They offer sushi and other healthier options, including sandwiches, salads, and platters.

I ordered their house made veggie burger with pineapple + avocado salsa. The burger was spicy and paired so well with the sweet pineapple salsa! AND – I didn’t have to pay extra to get a salad with my meal ;) I love that.

Can you believe this was the first time I’ve been to a restaurant that makes their own veggies burger? SO much better than just the microwaved one I can buy myself.

Nick got this chicken tikka platter that came with spicy chicken, veggie rice, pita, and a salad. I tried a few bites of his, and everything was delicious!

We both had their iced tea of the day: unsweetened tea with fresh ginger and mint.

I can’t wait to go back! I saw a few other things on the menu that I really want to try – it’ll be fun to have a few more lunch dates here.

I ended up having some pineapple today at work…right out of the container.

I think I need some cute plates + bowls for work! I have a bunch of mugs, but I need to find a nice plate to keep at work to use for meals and snacks. Any suggestions?

As soon as 5 pm hit, Nick and I were gone!

We actually both had  pretty rough days today, so we were just ready to get home and put the day behind us.

And this is the best way to start the weekend, I think. Nick ran up to the store for some Highland Brewing Company while I worked on dinner.

The inspiration for dinner tonight comes from A Better Bag of Groceries!

I’ve actually made this WW recipe in the past and totally forgot about it.

I ended up making a few changes with what I had on hand and omitting a step because I was hungry + lazy. ;)

I cooked 8 oz. of whole wheat bowtie noodles, and then added the following:

  • 2 chicken sausages, chopped
  • 1 cup peas
  • 1 cup diced roasted red pepper
  • 1 can diced tomatoes
  • oregano
  • basil
  • crushed red pepper
  • 1 Tbsp tomato paste
  • salt
  • pepper
  • garlic

We also had some grilled romaine on the side.

Have you ever tried grilling romaine hearts? They’re so good!

I just take a romaine heart, slice it in half, and drizzle with a little olive oil, salt, and pepper. You grill for just a minute until the leaves start to char and serve!

It adds such a great flavor to a plain ole’ salad.

 

Not sure what else will happen tonight! We just got back from the store, but we may be going back out to town soon. A few of Nick’s labmates are leaving the country, so we may go out to say goodbye to them. I guess we’ll see?

  8. I love grilled romaine shrimp Caesar salad! Such great flavors and the warmth and grill taste just add so much to it.

  9. you always have such tasty looking meals – i have never had homemade veggies burgers or grilled romaine hearts, I am dying to try homemade veggie patties to cut down on sodium and processed foods.

  10. That iced tea sounds great! I never think to add stuff like that at home and I always have them around… note to self! I am curious what their other “teas of the day” are.
