I had a great bowl of oatmeal this morning.
I think every bowl of oatmeal is great, but this one was especially good thanks to the perfectly ripe pineapple!
I hadn’t made Upside Down Pineapple Oats in a long time! It’s good with canned pineapple, but so much better with fresh.
And the pineapple I bought this weekend is definitely a treat. I ate a good deal of it last night when I was cutting it up. ;) It’s impossible to resist when it’s this ripe!
Upside Down Pineapple Oats
- 1/2 cup oatmeal, 1 cup water, pinch salt
- 1/2 cup diced pineapple
- 1 Tbsp coconut
- 1 tsp brown sugar (the key to this bowl!)
See how the brown sugar melts on the hot oats? Yum. The teaspoon of brown sugar makes such a difference in this bowl oats – don’t leave it out!
If you think pineapple will be weird hot, it’s not! Don’t knock it ‘til you try it!
What food do you have a hard time resisting?
Fresh, juicy pineapple is definitely one of mine. I remember one summer, my mom and I ate an ENTIRE pineapple right after we cut it :) It was SO good, but our mouths hurt SO bad after it. Totally worth it, though!
