Chocolate Mint Cookies

Lindt Dark Chocolate and Mint Truffles.

Grasshopper Cookies.

Grasshopper brownies.

Mint chocolate chip ice cream.

Mint moose tracks ice cream.

If there’s a candy or dessert with mint and chocolate, I’ve probably had it. And I probably loved it.

And I don’t want mint-flavored things to be stuck in the holiday season. I don’t understand why those Mint M&Ms are only a Christmas deal, but I guess it is a good thing since I can (and often do) eat them by the handful.

I’m not sure what it is about mint and chocolate together, but I can never turn it down.

I love the mix of rich chocolate with refreshing mint. The mint just lightens everything up enough so I don’t feel like I’m eating something horribly decadent…even if I am.

But who can eat Girl Scout cookies all the time? I don’t even know a Girl Scout around here. And I don’t work with Girl Scout moms who sell cookies in the office for their kids. I don’t think I’ve had a Girl Scout cookie of any kind in 3 years. I’m not horribly sad about that, but I do love a good Thin Mint.

So I came up with a Chocolate Mint Cookie recipe to fulfill my cravings and, as crazy as it sounds, it’s actually pretty healthy.

And aren’t green chips in cookies just fun?

Chocolate Mint Cookies, makes about 1.5 dozen

  • 1 cup whole wheat or white whole wheat flour
  • 3 Tbsp cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup sugar
  • 1/2 cup Dark Chocolate + Mint Chips
  • 1/3 cup pure maple syrup
  • 1 tsp vanilla
  • 1/4 cup canola oil
  • 2 Tbsp almond milk
  1. Preheat oven to 350.
  2. In large bowl, mix flour, cocoa powder, baking powder, baking soda, salt, sugar, and chips.
  3. Add in maple syrup, vanilla, oil, and almond milk and mix until batter comes together.
  4. Drop by tablespoon onto a baking sheet, about 1” apart.
  5. Bake 11-12 minutes.

I thought about adding peppermint extract to the cookie dough, and I may try that in the next batch.

But I also love chocolate + mint more than Nick, so I didn’t want to overpower him with mint in these cookies. At least not until I knew what he thought of this batch as-is.

Nick came home after I made this batch of cookies and grabbed one on his way through the kitchen.

The one thing I heard through his mouthful of cookie?

Tastes like a Thin Mint.

Not “tastes like a healthy thin mint”.

If you can fool a boy, I say the recipe is perfect.

Mission accomplished.

  2. These look phenomenal! I too love mint and chocolate. In fact – I’m not a chocolate fan, but if I want chocolate, you’d better believe it’s going to be paired with either mint, coconut, or almonds!

  7. I love mint and chocolate too! And I gotta say – I think it’s hilarious that people get all hyped over the Sbux mint chocolate mocha around the holiday season. I guess they don’t realize they have the syrups year round and you can order it anytime, unlike the mint m&m’s :)

  11. I love mint and chocolate too. My grandma grew wild mint outside her house and we would chew on the leaves for minty flavor.

    Definitley if you can fool a boy it’s good. Hunni is my barometer for recipes and he loves eating them usually.

  21. Mint cookies and cream ice cream was one of my favorites when I was a kid. Sadly, I haven’t had that flavor in WAY too long. Thanks for the reminder! Your cookies look delish and are beautiful!   22. Oh, my, goodness. YUM!!! I used to hate mint and chocolate. I know, I know, insane much?! But I recently tried a thin mint cookie and low and behold, it was love! I’m currently obsessed with Publix Thin Mint Frozen Yogurt!

  26. I’m so happy you linked to these in your mint roundup. Just today I saw some Ghiradelli mint chips in my cabinet and I looked them up and they don’t even make them anymore. I think they must be a few years old but they still tasted fine. :)

    I love the ingredients in these! I’m so tired of seeing recipes with Thin Mints (only because I’m jealous since I have no access to them) so this recipe would be a nice substitute. Not a sub for using Thin Mints in other recipes, but at least I can get my fix. Thanks for sharing!
