Rainy Day + Coffee Dessert

Even the bad weather today hasn’t gotten me down – I’m just SO happy tomorrow is Friday!!! Nick and I have fun family plans this weekend and I’m ready to just be done with work already ;)

I snacked on some more almonds + prunes today while finishing up some work and then played with Maggie until Nick got home from helping set up sound for church.

We had plans to grill out and make burgers with that local meat, but we had a few things working against us:

  • It was raining, so Nick didn’t really want to grill
  • We had no buns for burgers

I actually looked up some homemade hamburger bun recipes today and was planning on making some, but once the weather started turning bad, I figured we wouldn’t be grilling tonight regardless.

Even without the burgers, dinner turned out great.

Since we planned on burgers, I didn’t really have much to work with or a backup plan since we’re leaving town tomorrow.

After looking through the fridge and finding some peppers, I decided on making a “dirty rice and beans” type of dish.

Too bad I found out I had no beans in the house!

But…I had no other ideas, so I made it anyways.

While the brown rice was cooking, I got to work on the meat + veggies.

I sauteed an onion in a little olive oil until it was softened, then added 1/2 each of a red, orange, and a yellow pepper and some garlic.

Once the veggies were soft, I added in the ground beef and browned the meat and veggies together. Then I put in 2 Tbsp of my favorite tomato paste-in-a-tube, some cajun blackened seasoning, oregano, salt and pepper and let that all cook together until the rice was done.

Since I had no beans (!) in the house, I rummaged through the freezer and found a bag of mixed frozen veggies that worked great in this. It had red peppers, green beans, broccoli, garbanzo beans, and kidney beans.

Mix it all together, and dinner was ready!

And, since I used the 10-minute brown rice, this dinner only took about 20 minutes to put together. Plus, nothing’s better than a one-dish wonder.

Dessert was something I’d been waiting for all day long.

After trying that Cashew Creamery Cappuccino ice cream the other night, I knew I wanted some type of dessert with it. But…Nick and I ate almost the entire pint the other night, so I’m trying to ration what was left ;)

I made myself a cashew-cappuccino green milkshake! This is one reason I love green smoothies: they taste no where close to how they look.

For this “milkshake”, I used:

  • 1/2 a serving of the cappuccino Cashew Creamery ice cream
  • 1 cup milk
  • 2 cups spinach
  • 1 tsp cocoa powder

It tasted like a blended coffee drink! Even better that I got in some more veggies with it :)

Maggie just got a quick bath and is now going nuts in the house!!! Off to catch up with her before The Office!

 

And Dad – not sure where you are in the air, but I hope the rest of your trip goes well! We miss you already.

 

Breakfast tomorrow is going to be awesome ;)
