Prepped and Ready

The hardest thing about working from home is deciding on lunch.

That’s why I’m so happy when I remember to do a little prep work the night before! I don’t have to worry about making a decision and it makes getting lunch ready so much easier.

While I was roasting the veggies for dinner last night, I went ahead a roasted another sheet pan full of mushrooms and brussel sprouts.

Since Nick’s not a fan of the sprouts, I knew I would have them all to myself :)

Since all my veggies were already roasted, all I had to do today was heat them up, toast my Naan, and get the hummus out of the fridge.

I had half of my roasted mushrooms and brussel sprouts, plus the last of the roasted asparagus and onions from last night. This is one HUGE bowl of veggies!

These whole wheat Naan from Trader Joe’s are so good and filling! I love how puffy they are, and they’re especially delicious slathered with hummus.

I also keep forgetting that we’re leaving tomorrow for the weekend! I need to get a load of laundry going at lunch so we can pack tonight.

  1. I love batch cooking on the weekends, it makes weekdays go so much smoother. I make all sorts of things depending on my needs for the week but without fail, I always have frozen homemade bean burgers on hand.

  2. I cut up my veggies on Sunday and boil/shred chicken to use in recipes throughout the week. I also make wraps and freeze them for work. In the morning I grab one and heat it up or grill at work on my mini-Foreman. It helps to plan ahead definitely!

  3. I try to prep a bunch on the weekends and the use them throughout the week, but then I get new ideas and want to try them right away and end up with more food than I can eat!!

  4. I do the same thing! When I have the oven on for something else I will roast a bunch of veggies all at once. Then they are all set to go when I need something quick!

  5. I tend to make something a little extra on Sunday so that I can have that one night during the week. I also cut veggies for salads on Sunday so that during the week all I have to do is throw the salad together.

  9. Preparing veggies beforehand is SUCH a time saver and it makes for some delicious meals! I have never had brussel sprouts before but everyone on the blog world seems to love the,. I may have to give them a try!

  13. I usually try to make a big pot of something on the weekend or make a huge mixed veggie salad as a meal base. I love working from home so that I have a bunch of options!

  14. I’m a slacker and buy presliced veggies so that it cuts my prep time. I don’t have a lot of prep time so this saves me and allows me to make a home cooked meal most nights.
