Hot for Ice Cream

This weather is so nice! The skies are blue, we have a slight breeze, and it was in the low 60s today – too bad there’s no guarantee it will stay like this for the next few months. I’m just ready for it to still be light outside when we get home!

Nick ended up working a little late tonight, so when we got home, he just took Maggie out in the yard to play (instead of going on a long walk) while I washed dishes and got dinner out and ready.

I did snack on a few supercharge me cookies before heating up dinner –

These cookies are so addicting! I even make a double batch for us, and they don’t last a full week in our house. I guess I just inherently knew it was chocolate chip cookie week, right VeggieGirl? ;)

Dinner tonight was easy leftovers: tuna casserole and broccoli.

And even though dinner was good, I’m much more excited about dessert!

Cappuccino Cashew Ice Cream!

And check out those ingredients!

I found this cashew ice cream at Annie Kay’s (a local health food store) and finally gave in. The best part?

Blue Mountain Organics, the company that makes the Cashew Creamery, is LOCAL. Yup – right here in southwest Virginia. I stole a taste a minute ago, and this is the best coffee flavored ice cream I’ve had. I’m pretty sure I’ll be having a bowl of this during LOST tonight.

Coffee cashew cream, LOST, and White Collar? What a way to end a Tuesday :)

  1. Yum! That sounds delish. Now you have me wondering if I could whip up some cashew cream ice cream in my ice cream maker!

  2. I can’t wait to hear more about their ice cream! I’ve tried a lot of their raw cookies, brownies, and nut butters, and they’re excellent! I want to try the ice cream but I don’t think there’s any near me

  3. Seriously wishing I had some ice cream right now. :)

  4. Wow I would love to try that ice cream!

  5. OH MY GOSH! Where can I get that ice cream?!

  6. So strange… I just read a recipe for pear cashew cream, which you can freeze and eat like ice cream in this raw food book I’m reviewing. I’m glad to hear you give a thumb’s up to your cashew-based “ice cream.” You may have just inspired me to try that recipe.

  7. WOW, that ice cream flavor sounds excellent!

YEAH, LOST tonight :) I’m excited.

  8. Cashew ice cream? Sounds different and worth trying :-)

  9. That ice cream sounds incredible!!! Enjoy girl!

  10. That looks amazing! I could totally eat that.

  11. sounds like the perfect tuesday to me! but i just finished lost and how annoying is it that NO questions have been answered yet?!

  12. whoa. Who knew VA is such a foodie state? The ice-cream sounds awesome!

  13. Wow, that ice cream sounds great! I will have to keep an eye out for it or break down and order it online!
